    i know white onions has a mild sweetness to it but at least adding a lil bit of brown sugar will help balance the acidity and saltiness…

    So happy to have found this. Having worked with Filipinos and travelled with work for over 18 years I love the cuisine. However, I was taught ginger is only used in the marinade for fish adobo. I'm not sure how much notice a comment on a 6 year old video will get, but you must try kare-kare (pronounced karay karay), letchon kawali (similar marinade), etag (smoked pork from north luzon) and isaw (just to see Jamie's face)

    the peeling of that ginger though! wet it under a tap and use a teaspoon to scrape the skin off!

    and peppercorns should always be slightly cracked (press them using a flat-bottomed pan) if using them whole like that!

    My wife just fries the onions and garlic then bungs the rest in and boils until done.

    (As a filipino)

    Expectation: they eat the chicken together with soup poured on the rice
    Reality: they ate the chicken just like how you typically eat fried chicken, only using hands, and without any rice

    gotta try that 🙂 even though I'm 4 years late, thanks for featuring our most famous dish. Please do more filipino recipes in the future

    I add chilies or chili oil on my adobo though and no sugar on it.. The good thing about it is that it's a customizeable dish and no one will get mad at you for putting ingredients you want on it as long as they are reasonable. As long as you have the main casts of adobo: garlic, soy sauce, vinegar, bayleaf, black pepper, then we give you a thumbs up! ♥

    Yikes. This is the most complicated chicken adobo recipe. Marinading it for a day?! Who has the time? Chicken adobo is supposed to be a quick and easy staple food. I’d say, skip d marinading process and throw all those ingredients in a pot n slow boil. When the chicken is cooked, then crank up the heat to reduce the sauce. Also, I’ve never heard of ginger in adobo before.

    Bit of a history junkie here so just want to share that Adobo is primarily a Filipino dish. The Spaniards saw the locals cooking meat using vinegar to preserve it and they called this method Adobar which stuck.

    I am filipino american and this recipe is like an upgraded version of what I would say most recipes, but every family has a different recipe. They do everything so proper my family just skips most of the steps and if one of the ingredients is missing we just ipprovise.

    Binge-watching Sorted Food videos and am so glad y’all tackled this one! This is pretty much how my family makes adobo, although my dad loves throwing in chicken livers in for a flavor boost/different texture. Please do more Filipino recipes!

    That's A LOT of vinegar. When we cook at home, we usually put 1-2 tablespoon/s of vinegar and we add it at the end of the cooking.

    I'd brown the onions first, sear the chicken in the same pan (moving the onions on top of the chicken to protect them from burning) and then introduce the marinate. This makes it a one pan recipe.
