No no no. After the triangle is made, you do not need to cut the middle out. You should just cut a 1/2in cut in the center, fold the cut up and out and then roll them into the shapes. You want the center to have a nice bump, croussants should not be flat, it should be rounded. Your detrumpe is also too dry, dont melt the butter. The butter should be cold for the detrumpe and you want to crumble it into small pieces evenly through the flour before adding in the yeast and water/milk.
