    Layer 1:
    150 g digestive biscuits
    50 g butter, melted

    Layer 2:
    2 large lemons
    2 large eggs
    150 g caster sugar
    100 g cold butter, cubed
    1 tsp corn flour, heaped

    Layer 3:
    3 egg whites

    120 g caster sugar

    I separate the eggs for the meringue first, adding the yolks to the filling (reduce the butter just a bit, because yolks are rich). No waste!

    I like a really really sour lemon pie, so maybe a thin layer on top of a buttery crust is actually better. The thicker ones tend to be pretty sweet.

    My family used to make this when I was a kid. I tended to get myself in trouble because I really liked sweet things and didn't like sour ones. So I would just eat the meringue off the top and leave the rest. One of the jokes in my family was "Make sure you never blend a ghost into the pie, or it will turn into Boo-Meringue Pie, which will make your stomach do flip-flops if you eat it!"

    you're supposed to bake it for about 20 minutes around 300 F because it has eggs in it!

    Blow torch! Try a simple camp wind proof lighter! Takes up less room and use it for a bar bee fire up mate!

    Bit late in the day for such a suggestion, but the best thing I've found for compressing and levelling a biscuit base is a potato masher. Flat with a large surface area

    Hi guys i have a problem… i don't know why but every time i put the meringue layer on my pie, after an hour or so the meringue dissolve ( at the end i got a kind of translucent liquid between my lemon curd and the meringue, it's maybe the egg on the meringue that become liquid again. It's very annoying ) what can i do to stop having that? maybe is the grease on the lemon curd that dissolve the meringue… i hope you will understand what i'm talking about xD by the way thank you guys, i love all your recipes.

    i made this and just instead of 2 lemons i used the juice of 3 and 3 eggs because i wanted a bigger amount and it turned out brilliant! thanks for the recipe i love you guys!!

    hey sorted food, I made this today but my lemon curd had a lot of white lumps in it after cooking it. is it egg whites? If so should I strain it?
