The Cornish tend to be precious about their pasties so never say it is one or they'll have a hissy fit they're very very narrowly defined and I'm not sure why (I understand a narrow definition to some degree like only the ingredients that would have been used at the time just not the degree they have the pasty to). The original version had jam in one half so it's not like the current version was the first and if improving it by adding herbs and mustard both of which are traditionally English anyway make it not one maybe the definition should be broadened slightly. I doubt every single house made them exactly the same way every day at all times of the year back then anyway.

I grew up with Pasties as this is a big thing in the USA where I am from. We have a lot of English heritage. It is to this day one of my favorite food!

    January 13, 2024 at 11:52 pm

Wrong, wrong, wrong 👎🏻 Should be strong flour. Should be kneaded. Carrots? No! Should be beef skirt. Parsley? Mustard? No, no.

  25. @colingarrard5741

    January 13, 2024 at 11:52 pm

Definitely NOT a Cornish Pasty, genuine ones have sweets in one end!!!!!!

  32. @Knappa22

    January 13, 2024 at 11:52 pm

Wrong re. pastry. It doesn’t matter if you overwork the pastry. It’s a disaster if it’s too short and crumbly.
It needs to be robust with a bite to it. This is why bread flour is usually used. A Cornish pasty would have been taken by a miner in his pocket to work and needed to be strong enough to encase the filling until lunchtime.

  33. @frankstocker5475

    January 13, 2024 at 11:52 pm

Only carrots in a London pasty.

Interesting to see that carrots are not traditional (according to every comment) Pasties are still popular in northern Michigan (USA) as cornish miners introduced them to the largely finnish population working in the copper mines there. The pasties adopted by the Finns are still usually made with carrots so apparently some of the cornish immigrants had the recipe wrong. (Or were banished from Cornwall for adding carrots)
