Funny if Barry had added anchovies to the spag bolt he wouldn't have batted an eye lid the fish sauce was just a different spin on the same idea.

So I must thank you for getting my GF and I out of our rut and into better cooking. We now regularly use W. Sauce, Sesame Oil, and thanks to uncle Rodger MSG in our cooking. I add all to my soups and sauces. I will pick up miso, tahini and fish sauce the next time I’m at the market.

I watched this when it first came out and really just kinda went eh I have some of that already and it did give me some ideas on what to do with some of the stuff so that was good. Last week I was making hotdog chili and just ended up with a random thought of hmm I wonder if I could use fish sauce in this the same way I normally use worcestershire because lo and behold I had ran out. Figured what the hell and did it kinda assuming that it may taste a little off but would probably be fine. Took it to family gathering and I have never been pestered so much for what my recipe was.

Hey guys, congratulations on your success and thank you for the hours of entertainment :). As an Egyptian, I think you misunderstand the best uses of Tahini. Most other arabic countries use it in background – which is the majority – and it shows in your videos. In Egypt, sesame seeds take the forefront when compared to chickpeas. Hummus is a secondary recipe. In Egypt Tahini is the major ingredient. Try: tahini, water, vinegar of your choice, salt, pepper, cumin, garlic, and dried pepper. This is "tahini salad" in (my very biased opinion) kick's Hummus's ass. And in the sweet column, try hummus mixed directly with honey or molasses. Makes a middle-eastern PB&J.

When I’m cooking steaks for dinner I love glazing mine in miso paste and then searing it in a pan! It gives the steak a lovely buttery and salty flavour, keeps the meat moist and juicy and acts similarly to an oil which seals the steak better because the oils get hotter more quickly

Finally got the courage to buy some miso paste today after seeing this video. Used some in my fried rice, and honestly what a gamechanger! Will he using it as a dressing to some side veg next with that lemon and miso dressing. Cant wait! Thanks for the confidence lads

Sorted crew – I am intolerant to soya, palm oil and rapeseed oil. This makes buying any ready made food and eating out difficult. Have the team any ideas?!?

After watching the video I bought everything except the pepper and I must say, these guys are right. The fish sauce is amazing and great for meat which sounds weird but it's true and it doesn't taste like fish AT ALL. Even the ancient romans where crazy for a fermented fish sauce called Garum but sadly this tradition has been mostly lost in western cooking. The other ingredients are great too even tho I had to get used to Tahini. But now I will use it again and again and again.

Honestly, my go to store ingredient for so much is truffle powder. It is really good for porridge, chips, and a whole bunch of other stuff outside of mushrooms and italian food. It's not the cheapest but the amount you use is tiny so it's worth it.

one of the dish I do when I'm tired is cream tagliatelle with fish sauce and/or oyster sauce. just put the cooked pasta and cream and sauce in a bowl and mix

To add to the Aleppo pepper- Kashmiri chilli powder is another great store cupboard ingredient very much in the same vein – spicy yet fruity and not overpowering, very good at adding a rich red hue to dishes, making them look nice and spicy as well as taste it.

This might be controversial. But people basically working with food never using fish sauce makes this so incredible. If food is their profession and the first time they used fish sauce in five years was now, are they even foodies? Makes me think their non chef members are lazy? =)

Turkish grilled meats and kebabs is like saying ATM machine, or PIN number. Kebab is a regional way of preparing and presenting meat dishes. For example Adana kebab is nothing like an Iskender kebab, and either of them is nothing like Cag kebab.

Worchester sauce
Teriyaki
Soy sauce
Canned tuna
Canned beans
Basic prep on hamburger or stew meat for use in many dishes (cook ahead and freeze), multiple species
Instant mashed potatoes
Instant soups
Food items commonly found from food pantries for those needing assistance (cheese, peanut butter, etc)
And for heavens sake, please do an episode on lentils!

I have three of the four ingredients but never thought outside the box on using them. I usually use fish sauce for Asian dishes but now have that I can utilize it for other dishes. I always thought it would make dishes taste fishy but I like the ideas of it being able to enhance other dishes!

I grew up eating bread with Tahini and Honey, we always had a mixed jar in our cupboard, that we just used on a spread. Was really disappointed, when most people I told about this, ddidn't know what I was talking about.

Miso actually made me like beets. Braise (confit?) in miso and butter, heat in oven until just starting to color, serve with dill and apple puree. Yummy.

Try fish sauce, finely chopped garlic and chilli and a squeeze of lime. Mix together. Make boiled rice and a runny fried egg. Break the egg yolk in the rice and splash generously the fish sauce mix (nam plah prio) over the egg/rice. (Add sausage, black pudding and crispy bacon to the rice and egg and you've got what my kids used to call a full Thai breakfast). Fish sauce makes it.

Most of the time I see fish sauce, it has a not-so-long use by date after opening. However, these guys seem to talk about fish sauce sitting in their cupboards for long periods of time. Is that a thing? Fish sauce with long use-by even after opening? Appreciate any advice from commenters 🙂

I know I'm late to this but the fish sauce in a bolognese pasta sauce is like adding a dash of Worcestershire sauce to it, or boiling parmesan rind in the sauce if you want to be a bit more traditional.

Currently in Australia, we have a show called the cook up with Adam liaw which is a cooking show hosted by a runner up on Aussie MasterChef 2nd season. Last night the theme was Italian food. At the end he was talking about Italian staples including anchovies, and one of the other people was a bit put out by them so Adam suggested using fish sauce instead and talked about the Roman garum.
