I don’t get why brits call everything on a bun a burger. A burger is ground meat that is either grilled, broiled, or pan fried. A breaded chicken filet or fish filet is not a burger. You don’t even need to serve on a bun. The original hamburger was supposedly served on sliced white bread.

as a vegan who found the kfc vegan burger to be disappointing to say the least, this was a fascinating watch. definitely wanna give this a go at some point, i'd also experiment with freezing it – having a dense "don't need to think about it" protein in the freezer that i can just throw in the oven on the bad mental health days is important to me

I'm somewhat confused. If Ben's not willing to taste what he's aiming to recreate, why is he even involved in this?
"I'm gonna recreate this thing based on looks" works for Lego, not for food.

When it comes to the eleven herbs and spices, I think white pepper and some celery product are definitely in there. Though I understand the prompt is "better", not "alike". Still, white pepper is a great ingredient in fried chicken. Unlike most spices, I find the smell of it somewhat revolting on its own (like the lower meridian of an active barn)… but in moderation, with heat applied, and with other savory ingredients in the mix, its purpose emerges without it being so overbearingly itself.
In case anyone isn't sure what white pepper smells/tastes like, if you've ever eaten hot and sour soup, white pepper is like 70% of that flavor profile. It can be kind of a lot.

I've been making this for a while as nuggets. After a while I built up quite a backlog of aquafaba (which I freeze in single serving amounts). I then started experimenting with chickpea flour, and found that the best results are replacing the can of chickpeas with 100 grams of chickpea flour and 1/2 c of water.

It would be interesting to reverse the chefbudget challenge once in a while. Give the low budget to a normal, high to the chef. Normal justhas to make it edible to pass.

even in American, we've been eating seitan since the 80s, but of course Asia has done it much longer. I remember when I was in high school I made "swiss steak" out of it, and it was delicious! my whole family loved it. lately I made char siu with it (with real homemade from-scratch char siu sauce; no hoisin, even!) and it was also amazing. I used chickpea flour in it rather than canned chickpeas, but similar with a similar result (maybe less dense). as long as you flavor it well, don't over- or under-knead it & steam it before baking or frying, it's delicious. it's REALLY good in sauces/soups because it's a flavor sponge, which is why good Chinese hotpot usually has bean curd, thawed pre-frozen tofu and gluten puffs — all are flavor sponges.

B12 is not heat stable and very volatile, so forget about that tiny amount of B12 in the yeast. Also, without certain cofactors the availability to the body is very low.
