Think of black stone as a bay leaf. You have no idea what the hell it is doing but you know when it is not there.

Those knot noodles found their way into my life when my grandma with celiac was trying out a bunch of gluten free noodles, we both decided that those will be the go-to and I prefer them over most noodles.

Interesting. I have an avocado tree, and never heard of using the leafs. Have some serious Mexican cookbooks and will check to see if that’s used in any of the recipes.

Giving the guys a Katsuobushi whole before shaving it and seeing if they can guess what it is could be kinda fun. Also tasting it freshly shaved it really nice.

    January 27, 2024 at 1:44 pm

Konjak noodles are great , when i wanted to lose a bit of weight i used them a bunch, in the right dishes you don't notice their watery ness but they stille give enough of a bite to feel filling,.

Here is something I don’t think you will have tried, udon tea, very popular in Japan!

I live in Mexico and avocado leaves add a kind of depth to the northern pork stew Asado de Puerco.

    January 27, 2024 at 1:44 pm

Oh man! Some of those sound so amazing!
Have you tried using Banana or Lotus leaves for cooking? They impart a wonderful flavour. Especially in rice. I found a more traditional Cantonese cookbook that used them for a 7 treasure rice that blew my socks off.

I don't know if you have covered it or not, but I would love to see you guys trying black scabbard, such a "pretty fish". Despite its appearance it is so delicate and tasty white fish, very common here in Madeira Island (Portugal). Or maybe some limpets.

Dried shrimps, dried lichens could be a very important part of a recipe, and the konjac noodles might be the main ingredient of a dish

  28. @janetmoore9876

    January 27, 2024 at 1:44 pm

I use the noodles for lo mein and they are delicious

Seeing avocado leaves in this episode, I wonder if you guys can get hold of lotus leaves. They are used in Chinese cuisine to wrap food in. An example would be lotus leaf rice, where they wrap glutinous rice, shitake, chestnut and meat inside lotus leaf and steam it. It looks like a wrapped parcel and it's so so fragrant because of the lotus leaf.

NOT THE CLOSED CAPTIONS SPELLING OAXACA AS "WAHAKA" ???????????

  31. @Davidpoggers

    January 27, 2024 at 1:44 pm

Imo serving hot pots without it boiling hot, is a crime. It is a boiling hot pot, not necessarily a spicy hot pot.

  32. @CAP198462

    January 27, 2024 at 1:44 pm

4:02 that was so bad, and it put the idea in my head to think of “The Cloche- Rock the crockpot.”
