The problem isn't that it's not hummus, the problem is that it exists as a classic side "salad" or dip in arab cuisine that is explicitly something else. I suspect Gordon knows that, but there's only so many terms and dish names you can push on the public. In terms of hummus, it is a simple misunderstanding on Gordon's part, and apparently many people around the world, they think hummus is just a dip. It is not! Hummus and pita (with a variety of toppings) IS A MEAL, it is served with lots of olive oil, spices and as many pita bread as you need. You are not forced to eat a spoon-full of oil with every bite, you are suppose to serve a large pile, so that every bite has pita, some oil, lots of hummus, and some topping. Sorry Ramsay. I would choose the cheapest grocery store hummus or falafel vendor anywhere in the middle east, over your dry, grainy, poop-looking squash dip.
