    I always add a dry white wine and let it reduce out before adding sweetened condensed milk.

    well, you can also save the spinach water and pour it back into the sauce once the tomato is in. Idk, I would feel bad waisting such a rich liquid.

    I kinda wish they did more pasta dishes with white sauces or alternatives to tomato sauce. I'm allergic to both milk and tomatoes and would love to know how i can make these pasta dishes without those key ingredients without losing the flavor!

    This was the best lasagna I've ever had…I did tweak the bolognaise just a bit though. Added about 1 tsp of brown sugar, and a 1/4 tsp of nutmeg….OH MY GOSH!!!!

    Reminds me a lot of my lasagna, though I've simplified it over the years, no wine, no courgettes, no tomato paste. I usually don't bother with cheese in the bechamel either but add it separately. Though nowadays I've simplified it even more and gotten rid of the layering. I just take all the ingredients above, replace lasagna plate with macaronies, fusili or whatever I have, then I mix it all the ingredients thoroughly and throw it into the oven. Way faster than layering and when you have kids that matters.

    I once had a dish with ricotta wich was so horrible that I can't bear it anymore, so I would maybe replace the ricotta with some gorgonzola. And another suggestion, put thin slices of mozzarella between the layers.

    Somethign that adds a really good twist to it is to chuck in a bit of soy sauce to the mince. It's confusing on the palate but so good.

    Now I'm going to hide before I get lynched by Italians.
