    True Canard a ;'orange is cooked with a WHOLE duck. these are lazy chefs who just don't know the difference.

    I salt the skin beforehand and allow some of the moisture to be drawn out, then pat it dry; helps the skin crisp up

    Love your sauce! Never done or seen it with added mirepoix, sometimes I added some celery salt because I like the taste of celery, but it tastes soooooo much better the way you're doing it. You guys are the kings of 'kinda-fast-food'.

    I thought it was pretty clear that if a French restaurant serves Duck à l'Orange on the menu you should just leave.
