I understand that it is a running joke, about Ben’s tastes. I must defend his tastes! Just because your mouth tells you that expensive things taste better, or that you tend to enjoy new and strange things, it does not mean you are insincere, or trying to be posh. That is a classist way of seeing people. Just because the things your friend tends to enjoy used to be exclusive to the wealthy, and you do not enjoy those things, does not make your friend a jerk.🫶🏻🫶🏻🫶🏻💋💋🇺🇸🌸Same, for Barry. Make all the fun you want, but he has been this guy, all along. That is why you are friends. This is why the series is successful, and you all have a lovely income. This is why James kvetches. Growing up in a very isolated community you are not exposed to most foods outside fish and meat. Watching these videos the food looks good, but do I have the nerve to venture to the unknown and try other foods.

Interesting. Our local Middle Eastern food outlets are Lebanese and the falafel are made from soaked, peeled (but not cooked) broad beans and parsely. I've never had chickpea ones. I thought the herb in zataar is, specifically, zataar

I don't know if there is somehow a major difference in canned chickpeas between the US and the UK, but I tried the quick version and it was a complete fail. I make falafel quite a bit and was intrigued about using canned chickpeas rather than soaking dried chickpeas overnight. I dropped the falafel into the oil and it just instantly dissolved. Didn't work at all.

I have never had falafel. I am not quite sure what it is, even after watching this video. I get that it is fried chickpea balls, but I think there must be more to it that just that, a whole story. Growing up mostly in rural Missouri USA, I didn't get a lot of culture. "Beans and taters" with some ham hocks when my parents could afford them, fried chicken and more taters… Pork steaks and more taters… I really learned to NOT like potatoes! I try a LOT of recipes, trying to get as far from the food I grew up with as possible. Chickpeas fit that, but so far I only like them in humus. I haven't gotten over my love of garden-fresh veg/fruit, I can eat tomatoes with pepper and a tiny bit of salt for days. Same with cucumbers, and watermelon fresh from the vine doesn't need any seasoning… Sorry, yammering. Back to the falafel, I don't know if my parents ever even tasted anything with chickpeas in it. Certainly, we never had them growing up. I have never even seen them on a menu anywhere. Chickpeas, not just falafel. I would gladly move elsewhere, except my son doesn't want to move. Plus, my friends have come to terms with Missouri, and don't plan to move out of state. I can't just leave my son a thousand miles away, it's not in me.

Quick correction if anyone is interested! The spice blend that Ben mentioned is actually pronounced "zah-trr" and is a staple spice blend in Middle Eastern foods that consists mostly of thyme. For a quick way to jazz up green peas, add some olive oil, some Za'atar, and s&p to taste for a new take on an easy mid-week side. If used sparingly, it pairs quite well with fish.

In most classic recipes i saw a note that the hydrated chickpeas should be grinded and not blended. Do you find it makes no difference?

If you are going to make any baba famous, use dried chickpeas, tinned chickpeas blitz to mush rather than a nice grainy texture. I did falafel for my a level food exam. Practiced at home using tinned and the texture was very stodgy, not how a good falafel should be. Luckily made brilliant ones in my exam.
