    It's sad to hear that in the uk fishmongers are hard to come by! I had no idea. I'm Australian and spent a few years living in holland and in both places fishmongers were all over the plaice. As a seafood lover I couldn't imagine not having easy access to a fishmonger.

    As an Italian who is obsessed with caring for the soffritto…. Frying it slowly, allowing it to caramelise perfectly before adding anything else because I was taught that it is the base, the initial and very important flavour beginning, I would be concerned about the added water content, and that it begins soft if I used it frozen, so I wouldn’t get that perfect caramelisation, and therefore my dish would miss that important beginning. Happy that Jamie confirmed.

    As someone with arthritis in my hands and quite bad sciatica I couldn't feed my family as well as I do without frozen pre-chopped veg and proteins.

    I love to cook and cooking from scratch is just my way of life.
    I have flare-ups more frequently as the years go on, and I am not always able to chop veggies or stand in front of a hob for long periods, so, frozen veg, chargrilled frozen veg etc are a fantastic help on those days.

    On days when I am not able to cook at all, having a lot of my veg and proteins frozen means I don't have to worry about food going off before I am able to get to it.
    I can still feed my family home cooked, from scratch meals, while not making my flare-ups worse and ending up in pain and out of commission totally for the next few days.
    Win/win

    I hate how little you seem to know about the actual cost/benefit analysis of the global supply chain; packaging somewhere far away is not de facto bad for the environment – often it can be better.

    I've never seen frozen minced meat in South Africa (doesn't mean it doesn't exist), but I buy most of our meat for the month in one go and freeze what we don't immediately need. If it was good quality to start with I've never noticed a difference. It's we only when we braai steak/rib eye etc we buy it on the day since you can tell the difference.

    I don't really buy any fish, unless it's line caught tuna, because I think it's worse environmentally than our meat. So as a family we probably eat more meat than the average Brit, since we only go meatless twice a week.

    If freezing the chemical composition of meats changes how those chemicals hang together is there some tenderizing benefit to freezing some meats for a controlled length of time prior to use in order to have them be more tender and or speed up the cooking time of certain dishes by reducing the slow cook time often used to tenderize meats?

    Fish is pretty unfair since it was frozen either way. They have to freeze them on the boats or they'd never bring any fish to market. lol Beef was likely frozen before it went to market too. lmao

    bolognese was not cooked long enough.. when it has been stewing for 4 hours and the cologne has been broken down etc… you would not taste the difference.

    Fish quay near me sells the freshest seafood, never know what they are going to sell as its all caught that night/morning and sold straight in the shop.

    The frozen Onion, Carrot & Celery mix is a very good buy as it gives you a quick, easy and portionable base to so many dishes.

    I wonder if there is a noticable difference in defrosting a product then cooking vs cooking straight from frozen

    i was a fishmonger when i was younger! Wish i could have kept with it (at Sainsburys) if it wasn’t for the pandemic!

    I'd realised about fresh fish often being frozen before. I make a point of checking before buying it, because it can affect when and how I might use that fish, or if it can even be frozen should plans change.

    I'm amazed that the frozen stuff is actually cheaper, its generally the opposite where I live (argentina). Maybe because we have good weather and the produce is close from where the people live.

    I’m not a massive fish fan, but I’d love to taste a freshly caught fish in a small towns local cafe or bistro or something like that who advertise a ‘Catch of the Day’. I’ve only ever eaten frozen white fish and salmon as a fillet ‘freshly packaged’ from Tesco, I’d imagine the Catch of the Day fish would still be a couple of days old at most but as a small town bistro I’d hope the fish is super fresh and delicious rather than the days maybe weeks old IQF fishmonger fish that is still good but would like to try a fish caught that same day rather than a while ago

    Many sushi grade cuts of Salmon and Tuna and many other fish are caught fresh, frozen immediately and packaged to ship. Surprisingly, Sushi grade seafood often times is much much older than the "fresh"…but still frozen? seafood found at your local shop. This actually has an unintended consequence for the fish making it much more delicate in flavor so it is more pleasant to eat raw.

    One thing not mentioned is use case. For instance when we add Broccoli to Mac and cheese, we opt for frozen because it's easier to incorporate the stalks because they get musher, as with fresh we would have to do additional cooking

    lets be honest, if you just make a stew for e.g frozen vegetables dont really matter as they still gonna taste amazing in a stew, but for things where the vegetables are the main actor go fresh & maybe even a little better quality as to the cheap alternatives
