Yeah, I know, necro comment. But I've just watched this for the first time.
One of the things I find glossed over in many cheap vs expensive comparisons everywhere (not just sorted) is the economics of replacement.
So take the first pan example here. 112 quid vs 12. So if the cheaper option works OK for you, but the pan dies after a few years you get about 9 "resets" before you expend as much as the expensive one. And yes I know the expensive one is "a purchase for life", but it's funny how life doesn't always work out that way. Sometimes you lose them in separations. Sometimes they just don't last that long (Scanpan, I'm looking at you!).
So it comes down to utility and lifetime cost. If the cheap pan works well enough and lasts 3 years, then the expensive pan needs to last 27 years to break even. Or be significantly better that your skills "grow into".
I tend to look after all my stuff and do tend to get a long life out of things. I've got a 20 year old Panini Press for example. But 27 years o better out of a pan I'm yet to manage.

Agree with Ebbers I don’t need a thermos cafetière as I want to drink the coffee now, but I went down the stainless steel route because of all the glass ones we’ve broke over the years, was only in the Lake District for 3 days this year and broke the one in the cottage.

I've owned a few french presses over the years and after making the switch and buying my first all metal high quality one it would be almost impossible to ever go back. They hold heat for hours, are virtually indestructible, and if treated well will last a lifetime. It's something I use every single day and I never even think about the extra $20-$25 I spent on it like 20 years ago.

Am on the Le Creuset list. Several times a year they send out email with sales of their pans. The pans are either seconds or the boxes were damaged but the pans are fine. The discounts are significant and perfect time to add to the collection.

James showed how strong his friendship with Jamie is because he’s figured Spaff out completely 😂😂 he instantly knew Jamie was only narrating his process to get chef approval so he did nothing wrong and corrected Ebbers’ assumption 😂😂 despite that I loved this video because it’s very important and informative to hear some chefs insight on what utensils to spend more on for their quality and where money can be saved! The premium utensils are out of my budget at the moment but they’re something to aspire to, and make my kitchen experience a lot more enjoyable because their added quality offers better results and more versatility

Like hexclad, I believe that like a good chefs knife, your pans are your lifeline in a kitchen and cook what you are comfortable with, but I also think that quality is important too, you can make do with a 5$ chefs knife, but a 105$ proper kitchen quality chefs knife will last you a lifetime, like these pans if you take care of them. Hang them up, dont nest them without padding, and do the work to keep em and they should treat you for life.

I like this video format because I find it really interesting seeing a luxury piece of equipment being compared to a cheaper alternative and using that video footage to make an informed decision whether the cheap product performs well enough in comparison to the expensive product and allow people to save money by not buying the expensive products and allowing people to have more money to spend especially in times when so many people are having to count their pennies with some even being forced to choose between heating or eating at the most extreme

I don't know about other cultures, but Arabs make coffee and keep it on hand for guests during important events (like Christmas, Easter, or Eid). Guests will stop by at random times throughout the day as everybody goes around to visit everyone else, and this often goes on for a week or so (to fit all the visits in). So you basically need to have hot coffee ready to go all day long. Anything that holds the heat in the coffee for longer would be super useful in this type of situation

I think as a pretty standard home cook the only things I’d consider spending more money on for better quality products are good sturdy knives, a solid long lasting chopping board and a decent non-stick and ovenproof saucepan and frying pan, I think at my point in life there is little to no need for me to spend more on ‘peripheral’ equipment because the basic tools do the job so that money could be spent elsewhere on things that benefit me more or serve more use

I have owned cheap bluetooth thermometer cause the shop didnt have any of the good ones. Order a more expensive one. The cheaper ones gave me temperatures that couldnt possibly be correct

Silpat and baking paper are not comparable they will yield different results. Have both and pick what suits your recipe.

Both of the pans are made from aluminium and made in China. Both seem to have a thick enough walls and should have even heat distribution. The le creuset has a nicer handle and will work on induction.
But in the end it comes down to the coating for this one and you don't know until you are years in. It is very possible that the cheap pan has a better coating. I would just avoid coated pans.

Half sheet pans are easy to get and silpats fit them nicely. My silpats have lasted for years, saving money and stress if having enough parchment

How is it safe to insert a meat thermometer before it's been grilled? Doesn't that push bacteria below the surface the same way that mechanical tenderization does? I feel like you'd want to sear it before putting the thermometer in and finishing it in the oven.

I think you guys evaluate things more with potential disabilities in mind these days — re: French Press/cafetieres; I have MS and shaky hands, and I have a Nissan stainless steel press because I broke all my glass ones, sadly. so for me, it's a great value.

I have a cafetiere for camping (nothing as fancy as yours), and I love it. The glass in the standard ones breaks so easily. I've had to toss out a few. A metal version is so much better.

Unprompted, here is my essential kitchen equipment list. Not a short list, but to me, the bare minimum. 1. A chef's knife that feels good in the hand. 2. A good paring knife. 3. A sharp Chinese cleaver, that can do so many things – finely slicing, butchering, smashing, scraping up, finely dicing, peeling (in theory could replace 1 and 2 if you know how to use it). 4. A good quality cutting board. 5. A large heavy based pot that you can braise in, boil water in. 6. A good quality sauce pan. 7. A saute pan or a well seasoned cast iron. 8. A wok (which could in theory with a lid replace 5, 6, 7 if you are familiar with it). 8. A good quality sheet tray 9. Tongs or cooking chopsticks 10. A ladle 11. A strainer that you can also steam with 12. 2 heat proof bowls of different sizes 13. A roasting tin 14. Kitchen towels, not just for clean up but for taking hot things out. 15. Something to measure. 16. Something to whisk. 17. A grater. The knives do most of the work, but you do need some other kit. This is just a home cook normal's advice – but I think worth it.

I wonder if you could do age-appropriate cooking episodes? As a parent who cooks, I have attempted to teach kids to cook several times, with mixed success. Late teen cooks LOVE to sling the spice rack into everything (No, cinnamon doesn't taste so good in Irish Stew…), As a young single adult, I got lazy and worked hard to convince myself that takeaway pizza was just as good after spending the night in the box and eaten cold. Restaurants for the young working parent or non-parent… and so the litany of food crimes continues.
On point help for humans… we need it!
