ULTIMATE CHEF VS CHEF FUSION BATTLE | Sorted Food

Stop what you’re doing because this episode is an Ultimate Fusion Chef Battle! Drawn at random, our Chefs were given two cuisines that they must fuse together in a cooking battle. Ben was given German and Vietnamese, while James was given Peruvian and Filipino. Sounds easy, right…?

    That no one understood James' comment about the Philippines and Peru being close together hurts my heart 😢 Hes right! They are both Spanish influenced and not actually that far away from each other when you go the other way across the globe, across the pacific ocean.

    I don't know of any cuisine that isn't already 'fusion' in some sense of spice trade and sharing traditions and seeds and cooking as a community (but also being colonized and such). I suppose if you were from an isolated tribe harvesting from nature with no knowledge of the outside world that could be considered untouched by other cuisines, but a 'real' recipe vs more and more irrelevant term 'fusion' seems funny. German currywurst anyone? A bahn mi? A hot dog? Pasta with tomato sauce? French fries? A burger? Fried chicken? Dumplings? Track whatever it is and you will come up with a dozen sources. Thankfully mostly delicious.

    I've never loved James more. He is impeccable in his approach to this battle. I see him as the underdog who prevails despite Ben's longstanding strategies of manipulating the judges (who are his friends for 25 yrs). I really really miss James. But I understand why he left.

    2:03 remember the world is a globe, not flat, Peru and the Philippines are closer the other way around it. Influence wise though, both were Spanish colonised historically so there's going to be a flavour palate overlap.

    You could also wery well say that Paella is ruining an Asian ingredient, and patatas bravas ruins two south american ingredients. If people had that look towards food five hundered years ago, food all over the world would be kind of meh.

    No matter how many times i revisit this fun battle, my only issue is the "they're not close at all" bit.
    They are if you go across the pacific ocean and not the long way round like the map hinted.

    i can only guess that barry walks a couple hundred meters to the shops but with a 10 mile detour =]

    Made Ben's dish a while ago and it was great

    Gonna agree with the judgement here, I feel like Jamie managed to nail more of the fusion part of his dish. For Ben it kinda seems like he really had this one particular vietnamese dish in mind and just tried to put a german spin on it with the most stereotypically german food items that come to mind. It also feels like the german side kinda got the short end of the stick when it comes to flavour, with essentially all of the german parts being flavoured in a vietnamese style but the vietnamese remaining mostly untouched outside of the noodles.

    You know what I love about Ebbers? He really wants to TEACH. I truly appreciate that. For one so young, he has a wealth of knowledge that I most certainly appreciate.

    As a filipino, I would do the Chicken Adobo, simmer the chicken with the mixture and reduce then fry the chicken thanks James for the idea

    I find myself listening to James and Ben talk for hours. Everytime Ben talks I learn a lot and when James talks I feel like someone is coaxing me to sleep, and I like both things

    Rewatching this, and, well. Ben's thing is a Vietnamese dish with sausages that get made in a Vietnamese style, so a vietnamese dish with additional vietnamese sausages, hard pretzels, which aren't similar to what you get in Germany *at all*, and a German beer, sure, but beer is universal. Like, if the goal was fusion, then James inherently wins, because James actually made something that is a fusion of two different cuisines.

    James, your dish was so composed that it didn't even seem like a fusion dish, whereas – so sorry Ben – the other dish was a hodgepodge of stuff that didn't seem to meld. Softened pretzel garnish on food is a hard sell.
