Just wanted to thank people in the comments for highlighting that the upload date for this video coincided with Mullivaikkal Remembrance Day – a massively important day for the Tamil people. This wasn’t something we were previously aware of and the timing of the launch was completely coincidental.

Whilst we never seek to be political in celebrating food from around the world, we always strive to point out right from wrong where we can – hopefully this small insight into Sri Lankan cooking ingredients and methods can help to celebrate and honour all the people of this great country. 🇱🇰 J

Tips on milking coconut. Get the right kind of coconut. Older coconut/milking coconut will have thicker, creamier layer of meat. Young coconut will have more water and less meat. Not ideal for coconut milk. Make sure everything is clean. Fresh coconuts go bad extremely fast once cracked open. So a tip is to steam the grated meat with a pinch of salt mixed in for 5-10 minutes over boiling water. This makes it lasts at least 2-3 days in the fridge. Otherwise, it’ll go bad within 1 day.
Squeeze through fine cloth to make coconut cream or enjoy your coconut flakes in your favourite dish. Keep in very cold fridge for a few days or freeze in potions for longer storage.

FYI, you can burn coconut pulp and use it as food colouring. In Thailand, we add it to our desserts.
