Very nice Ben, I would recommend at least to try using raw sauce, for example use tomatos from a can those arent cooked just poached and skinned. If you like chunks of tomato just mush it with fork or ricer, if You like smooth sauce just blend it np, add herbs of your liking and let infuse in the fridge just like the dough. If you dont make the layer of sauce too thick it will cook but still have a litthe bit of freshnes, Ofc you have to precook meats and other toppings etc.

Homemade pizza is good because from personal experience you get the satisfaction of making it yourself from scratch and is cheaper than ordering one, especially so if you already have some ingredients in your cupboards, but the difference in quality between homemade and takeaway pizza is incomparable. The frying pan and grill method gives you a decent pizza, a blisteringly hot pizza oven gives you the best results but are expensive to buy yourself or costs more to order than make yourself, catch 22 situation

Nevermind my negative comment, I don't think my strategy has yielded dough that stretchy. Gonna try it in my next experiments see what the results are for me. Not using any premium ingredients here

We do pizza all the time. Few different way's hubby makes the dough, I put together I heat oven with a large cookie sheet pan up to 500 F then put my pizza together on my pizza board shove it onto that hot pan for 15 minutes. Fabulous. But I have been trying pizza dough with my sourdough as of late. Great video's I have binge watched this past winter as I am laid off I think almost all of your stuff.

If you make sourdough, and have a starter, pizza dough is an excellent use for the "waste" during the feedings. Toss that in with some more flour, water, salt, etc… whip up a quick dough. Once it proofs, punch it down and cut it up into single pizza sized balls of dough, use one fresh and toss the rest in ziplock bags into the freezer. Will keep frozen quite a while. Take it out to thaw and rise again the morning you want pizza for dinner and off you go.

2023 (barely) update from me – I've done this dough several times, as pizza, calzone, stromboli, and even just bread-sticks, the family loved them all!
Edit – I didn't mention that I used a stand mixer and the dough hook, once it comes together, 5 minutes on medium/medium-high, then let it rest and prove.

The method here has really brought my pizzas to the level where I really want to cook pizza every week or two. It's a great way to get rid of excess ingredients. This is the video I send people who talk about struggling with homemade pizza.

Is it OK to freeze the dough? 2nd question, can I sub out the flour for say, whole meal flour, to be more "carb friendly" as I'm trying to lose weight?

The frying pan cooking method works really well with gluten free pizza dough, too! Just takes a little care getting it into the pan.

This was great and I definitely picked up a couple of new ideas. I've been working on my pizza dough method for a few years now. I sometimes make a small batch of dough with some extra yeast in it the previous day, then blend it in with the main batch so that I get a more developed flavour while retaining the elasticity of a newly made dough.I also like to add a couple of tablespoons of vital wheat gluten to the flour to add some more body. When more pressed for time, I'll make a skillet pizza dough, basically substituting the water and yeast with beer and cooking the pizza in a searingly hot skillet, flipping it once to cook on both sides, then adding the toppings and finishing it under the broiler.

I love doing this in a cast iron skillet, been impressing friends ever since.
But "blasting it on high until smoking" does not work with cast iron at least for me because it will burn. I do medium high and leave it on for less than a minute and then directly into the oven. Perfect every time.

I've been making pizza at home for years. Usually on a charcoal grill, but since I moved in highrise last year, I haven't been able to make a decent pizza. This is the simplest, best home recipe I've tried. All I can say is…wow

We have tried this exact recipe (knead for 15 minutes and rest for maybe an hour and half) multiple times and wow, it comes out absolutely delicious! 😍 Now we don't like pizzas from outside, we tend to make at home most of the time. It's amazing. Thank you so much! 💯

I add a tablespoon of olive oil into the pizza dough. Never tried the frying pan method for making pizza, but it does look awesome! Also have pre-heated the oven trays before putting them in, which goes some way to a crispy base. Red pesto is also a good cheat for the pizza base as well. And given that the house is so cold and therefore the pizza dough hasn't really been rising in the hour, the fridge method sounds like a winner too!
