Can we correct our first Pad Thai recipe? | 2012 vs 2018 | Sorted Food

Six years ago we attempted to make a . But have we learned anything since then??

In this attempt, we level up each of the elements using suggestions from you guys to hopefully make a much better version! Did we do a good job? How could we improve on this even more?

    The 2012 version could be a delicious fried noodles dish, but definitely not Pad Thai. The 2018 version could still be improved, but is undoubtedly Pad Thai.

    In the original version those noodles where way over cooked. Also the best thing to do with the dry rice noodles is to hydrate them for 15-30 mins in cold water to rehydrate them. Then drop into hot water for 30s-60s to reheat them.

    Thai here, just wanted to chime in to say that I really appreciate that you guys did the research on how to properly make the dish. Branch out of your comfort zone. Admit that your first attempt wasn’t right and do the dish justice. I’d say it’s very close to the Pad Thai I’m used to. The rice noodles should just be soaked in room temp water, then cook in the wok. No need for hot water. Usually we use the super firm tofu with yellow skin and they’re cut a bit smaller. No peanuts in the actual stir fried but only on the side. Although that’s not really a big deal. Well done! Kudos to y’all! 🎉❤ Cheers!

    You need a new version! Wow the first version used packaged udon noodles – no. For wok cooking – hot, quick, and have a proper wok spatula to toss quickly, scooping to the bottom while tossing so you don't damage the ingredients. Tongs and chopsticks can be useful but in a wok for pad thai see how street vendors cook it. Also, eggs in with oil, the other proteins toss toss toss very quickly over very high heat to get a toasted wok flavour, (might be a problem for your smoke detector) the noodles, sauce, garlic chives, sprouts. In both the noodles look overcooked and overworked – the 2018 version had a better type of noodle but they should look translucent – rice noodle ribbons – almost clear, and not be as broken up. I would also go for grilled prawns rather than chicken personally. Tamarind and shrimp paste definite good improvement. Being picky sorry. Funnily enough I think not a lot of Thai people in Thailand eat Pad Thai as their first choice of noodle dish – it is more of a popular Western/tourist selection, though I do love it.

    Actually HP sauce is a good substitute for Tamarind paste, maybe some added malt vinegar to up the acidity or just use less sugar. I'm not Thai. So its not a free pass culturally speaking ahha. Best let Jamie try.

    Too much using tongs in the wok have damages the noodles they are broken… flavour wise not bad, I would have fried the tofu first… and used peanuts ontop of the dish

    They started out wrong on step 1. They should have used boneless chicken thighs, they are much juicer and have much more flavour than chicken breast.

    Do people not grow daikon radishes in the UK? Because people all over America have been growing them for quite a number of decades and I've had pickled daikon all over the country, even in the rural Deep South. You guys need to get into it, you're missing a lot of new things.

    The redo is on point. I think what's missing is that when serving we often make a little dash of chilli flakes, crushed peanuts, sugar and a wedge of a lime on the side of the plate.
