This will save you so much time. I learned this years ago. Like preparing peppers and onions. The first time I made sofrito it took me about an hour to prep for it to be gound down in 5 mins. So much work. Now i can prep in 15 mins and get the same results. Prep time is your worst enemy and may prevent you from trying a recipe because of the work involved. He makes it look easy. Thats because it is. Dont psyche yourself out over perceived effort.

I crush the garlic heads down before I have to make a run to Home Depot. An have them with me in a new empty silver paint can. An let them put it in the paint shaking machine. Cleans the hell out of many as ya can ever want to have done at once.
