if you fried the beef (or the curry paste) and let the heated oil extract the red color from the curry paste, you would get more colorful dish.

This is my favorite curry from northern Thailand. Of possible interest to you: "massaman" refers to Muslims, as this curry is of Muslim origin (probably introduced by traders from India doing business in the Kingdom of Lanna, which is now northern Thailand). Interesting fusion of influences, however, as cinnamon is from India or Sri Lanka and peanuts and potatoes came from South America. Which is why I often say that fusion cuisine is definitely not a new concept.

nice mussaman but if you stir the curry with low temperature for a while and then slowly put coconut milk and let them release their oil before mix other ingredients, it will turn out another color.

originally, massaman is cooked with sweet potatoes. it gives that a little bit of sweetness cut to the curry
