    Great vid.
I would like to have the tortellini in the carbonara sauce with a few strands of the wide pasta around the tortellini to use up the last of the carbonara sauce after eating the tortellini.

Try sauteing gently torn up fresh oyster mushrooms (in generous strips, the tougher end trimmed first) in olive oil and sliced garlic and then roast (in the same baking tray tossed in panko or breadcrumbs, Parmesan, chili flakes, sea salt and pepper until toasted with a few crispy bits and then toss with pasta (or a salad). Or have piled on toast. Lemon juice, Italian flat leaf parsley, picked and lightly chopped sprinkled at the end. So simple and so good.

Never never never break the pasta and If you don't want to use spaghetti you something else what a horrible sin.

That being said you're one of the few things I do watch on YouTube so thank you all very very much.

The ultimate easy pasta dish would be the classic spaghetti with olive oil and garlic

Okay but real talk (I'm still gutted that neither Mike nor Ben used the best part of a chesnut mushroom, which is the stalk). I love recipes that "make themselves", so the-set-it-and-forget-it kind of dinners, you know, like, a stew-y kind of thing that I can leave on the hob for an hour, a low-and-slow bolognese that cooks for 4,5hrs… This type of thing. And buying those few extra ingredients is absolutely zero problem, when I'm making a shopping list, which is why I'd pick Mike's recipe over Jamie's every. Single. Time.

I absolutely LOVE mushrooms and I say that most meals could use them in some fashion. This episode is pandering to my love and making my mouth water so much.

Quick tip, don’t grate extra cheese to use in advance. It will dry out and be crap
