these still identify as pancakes. crepes is just the french name for pancakes that gained global fame due to the different ways of filling them. however, they are still pancakes. so are american fluffy ones. so are russian blinis. all pancakes. basics are the same. some just add baking soda or baking powder for either a spongy texture and more browning (baking soda) or a fluffy white finish (baking powder). all. pancakes. 🙂
