    My favorite is three scoops of raspberry granita and a shot of grey goose vodka! OMG! Just leave me both of them and a decent spoon!!!!!!

    If you're going to try to justify the cost rather than just say you want to spend that much then you need to know how long it will last. No use being good value over 5 years if it breaks after 2 (I'd hope that one wouldn't).

    I can peaches every year. I ran out & my son wanted more. I told him store bought was awful. He insisted, so I bought the BEST canned peaches available. He excitedly had a bite, looked at me & asked what they were. Canned peaches, I said. He replied, " those are not peaches !!!" I explained the difference if home canning vs store canning. He never ate store canned food again, and as the cook for his family, everything is fresh or frozen.. .

    Alcohol, a Tbs or 2, helps keep the frozen treats scoupable. Even the alcohol in extract will do. Like my fav I make, fresh peach, nutmeg, almond flavor extract that has alcohol for the softness.

    While eggs in ice cream has become all but standard these days, that is not the original recipe. Actual ice cream is just as it sounds…iced cream. That is its origins and the actual recipe. I make egg free ice cream all the time.

    Late to the table here ( 1 year later) But I have just decided to buy this ice cream machine as all the reviews I found raved about the smoothness of the ice cream and can't wait to try all these recipes out. I feel I can now use all of the functions of the machine and will be ready to cool down in the warmer weather with my granitas and sorbets. Thanks for your delightful assistance.🙂

    Gelato does not contain heavy cream or half and half. Only whole milk.

    When making Sorbet replace the sugar with Condensed Milk, gives it a smoother texture and nicer taste. Just blend well before churning in ice cream machine.

    Thanks Guys! I found this really useful and easy to follow. I have just bought a vonshef compressor ice cream maker, similar to the one you've used (don't have to freeze before hand) for just over £40 on ebay! its used but good as new and does the job. So I'd recommend getting second hand, there are loads out there. This video was great I'm going to try out a few of those ideas.. including the goats cheese, interested to see how that comes out. You gavee just enough info to make it easy to understand, but I feel confident to try experimenting a bit.

    My family grow guava, and one time I had so much of it that I had to cut up the fruit and freeze it because I like to juice them later. When I juiced the frozen pieces fresh off the freezer using the slow juicers with a spinning grinding mill stone and sieve, the fruit chills the sieve as it is pushed through and subsequently, an ice cream action happened and turned all the juice after into sorbet. I had to scoop it out of the machine because the sorbet being solid refused to gather down the juice chute, but it was delicious with zero added sugar. Not the best method to make ice cream because it nearly broke my juicer but it proves seasonal and properly ripen fruits make really good sorbet. Fruits that go through the starch to sugar sweetening process is especially good because the starch will form the base for sorbet texture. I plan to make proper sorbet recipe when I get my hand on an ice cream maker. From the garden I also have access to other seasonal fruits like mangoes and durians, perfect for iced dessert.

    For a similar price, pick up a Dewar flask and some liquid nitrogen and get even smaller crystals, faster.

    The amount I spend in the summer on 'premium' ice cream tubs – looking at you Haagen Dazs – I think I'd probably recoup in a couple of years. Effort free puds when cooking supper for friends as well. Have added to my Amazon wish list. Thanks Boys, keep it up please, marvellous.

    I've got an electric churn that has a metal canister that holds ingredients and a paddle, then is surrounded with ice and rock salt. Turn on and, by the time you're ready for dessert 30-45 mins, frozen treat is ready. I bought it a couple of decades ago, for about $30, and it's still humming along every summer. 😀

    my rule before buying an expensive gadget is if im consistent before. so in this case, i know how to make your cheats ice cream and like the taste of it so if im consistently making the cheats ice cream buying an ice cream maker would be worth the investment cos i know id use it rather than it sitting there gathering dust after one use. so far the only gadgets i have are a stand mixer waffle press and technically i have access to a bread maker which all get used enough to be worth the money ^.^

    Jamie mentioned he made a cheese ice cream, and that made me think of other uncommon ice cream flavours that were out there when ice creams started catching on, like rye bread, truffle, parmesan, artichoke, and ambergris spice blends. I'd love to see an episode with you guys making and testing some of these historical fun flavours (and give Ben an excuse to throw history facts around)!

    Sometimes it's not about saving money.
    A gadget like this is about quality and versatility. With this you are going to get a higher quantity, fresher frozen treat then buying it at the store. And if you're like Ben and learn the science of it, there are all kinds of things you could make that you couldn't get in a store or restaurant. Just for those two reasons, I could TOTALLY see someone having one of these in their kitchen. I could never afford or justify it for myself, but I can see people I know having one for sure.

    Luckily since your video they have become much cheaper to buy. I have had one for a couple of months and have made gelato, ice cream and sorbets. My favorite is vanilla bean ice cream with cut up chocolate donut bits. I add the donut bits in the last 15 minutes so they do not get broken apart too much.

    I feel like the cookbook Ice Cream Happy Hour would be right up Ben's alley. It shows the technique of using unflavored gelatin as a carrier to make stronger alcoholic ice creams & sorbets. Highly recommend checking it out. Also may be a fun experiment to see how far you could push the alcohol content using that technique.

    I'd love to see a comparison of the Anova Precision Oven and the Fotile Steam Oven. Also, curious if you've tried a freeze dryer and, if not, maybe add that to the high-end review lineup. I've recently gotten my freeze dryer, but haven't been able to use it yet due to being sick. I'm trying to decide between the Anova and the Fotile.
