    I want to that board with a Japanese beer… It looked amazing. The pasta was clever on the flavour choices and sake is a wine so it pairs like any light pasta dish would with a crisp wine would.

    I think creating the sorted brand has done Ben wonders, he’s grown in confidence and he’s always had the talent but he seems like he was always quiet and awkward growing up, sorted has helped him develop to where he is as a confident and humorous individual who’s continued to refine his talent doing a job he loves. Fair play Ebbers always gives 100% for the channel and it’s paying dividends for him personally

    I’d love to see a video with a similar concept, but instead giving Baz and Jamie cooking against the chefs, but the normals have time to prepare in advance, and the chefs only find out the cuisine at the start of the battle. Would be interesting to see how the chefs cooperate on the fly, maybe becoming too technical and disjointed rather than the normal fluidity and cohesion we see when collaborating, it’s great seeing the chefs minds go into overdrive in pass it on when they see what’s on the table, what’s already been started and how it can be improved and what the final dish will look like all at once. Their brain goes into overdrive as second nature because they don’t panic but what would two chefs who are unprepared be able to rapidly create against a team who have had the time to prepare and go into the battle obviously with the handicap of less skill but with the advantage of preparation, how close would this battle finish in terms of the end result??

    This video took a major twist about 30 seconds into the battle as the guys seemed to reverse methods, Ben normally prepares a spread and James does one dish done very well. Instead, Ben decided to use pasta in a Japanese battle and James prepared a feast fit for Henry XIII 😂 and it’s nice seeing James and Ebbers on an even level as so often Ben has travelled to the country of choice and has that extra experience of culture and cooking methods, not this time as both visited Japan together to learn and experience authentic Japanese cuisine to inspire them

    So interesting. I am not Japanese but I love the cuisine. Aside from the sake I would find it hard to peg this as Japanese fusion food. I agree that the apparent simplicity of Ben's would be closer in spirit rather than the tasty looking smorgasbord. Ben's dish however seemed far more Italian than Japanese rather than half and half (if that is the intention). Japanese food already has fusion elements such as fried cutlets with curry sauces and rice (sort of German/Indian/Japanese) which are great. Hawaii has favourite foods with Japanese influences. I think this could go for another round. Having a Japanese judge at the table – genius and fun to watch. Perhaps a mashup between Japanese food with another cuisine with a prominent fish and pickling or fermentation tradition – a perfect pairing along with the sake? Perhaps Finland? Having lived in Finland it is interesting that people have said that Japanese and Finnish as languages have similarities too.

    In all the years og going to Japan (30yrs) I have never heared of Sarke or Mezu. Mesu, there is not "R" in Sake and Miso is pronounced as ME SO and not as you and the rest of the cooking world and gaijin think it is spoken

    Excellent! However I was confused that Ben had never heard of lasagna rolls. I first made them back in 2015 and have bought them at Aldi in the last 2 years.

    I'd probably have to agree with the decision o-o I trust Chef Ishii's judgement.
    Now outside of that.. I'd def prefer Ben's dish.. James's is a bit overwhelming o-o

    The shock on the Chef's face was priceless. Also how Ben immediately got up to greet Chef Ishii-san, it shows the kind of politeness and respect I love in people. Also him shaking, he was in shock indeed.
