Rice like that is really easy if you just cook it in loads of water and strain.

Butter chicken is supposed to be cooked separately. It's literally supposed to be a way of reusing leftover tandoori chicken, that's where the recipe originates from. come on…

    Currie's curries curry favor.

It’s rather apt that this attempt to recreate two Indian curry dishes is being attempted by James Currie.

Have they never heard of kashmiri chilli? Instead of adding red food coloring James needs to add Kashmiri chilli! Kashmiri chilli isn't very spicy, but it adds loads of color.

A curry is always such an amazing midweek dinner because it can be done very quickly and easily by using cheats like the potted curry sauces and microwaveable rice packets so all that needs to be done is to peel and slice mushrooms and slice up a protein, cook them off to cook the protein through and evaporate the water out of the mushrooms, add the potted curry sauce into the pan and microwave the rice so you can get an amazing dinner in no more than 20 minutes maximum, and spending time and giving care and consideration to prepare a curry from fresh ingredients makes for an even better dish because it’s all been done from scratch, but it is absolutely impossible to replicate the quality of a curry that you get from an Indian restaurant, either in house or as a takeaway. The experience and expertise of the chef’s at Indian restaurants have the extra knowledge and equipment to make what can be a simple dish into an extraordinary meal with deep depth of flavour because they’ve perfected the spice and herb ratios in their blends that add all the flavour and make the restaurant meals that extra level above any homemade curry

Indian food is hard to find and VERY expensive where I live. I've only had it once because they sent me sauce, rice, and bones. Message received.

James 100% pass from me, personally hate tikka masala that is as red as a fire engine.
We tried one from a local takeaway other than our usual, and it was disgusting, red and strong taste of coconut and very mild, they said it was a tikka masala but was more like a korma, in taste.

    tikka masala needed paprika!

Lamb saag is yummy, actually its a pakistani dish as indians do not mix meat and veg. Saag is a very punjabi dish, most of punjab is in Pakistan. Indians generally make their curries sweeter, pakistanis do not like sweet and sour only in a pakistani-chinese fusion dishes. We like our food meatier and if vegetarean dish, a very fattening version full of makhan and khor (ghee) and more bulkier version. When you eat them, you know its not that healthy.

We mix everything, all combinations you could think of

James: "I'm gonna give the butter chicken a pass, because even though it doesn't taste like the takeaway, it tastes great."
Also James: "I'm gonna give the tikka masala a fail, because even though it tastes great, it doesn't taste like the takeaway."

Go to your local curry house and ask them about there base thats what makes he difference thats what your missing i think your base looked watery and flavourless but I could be wrong

I think the reason the chicken meat found in curries is breast is, that all the thighs go into pakora.
