    I take it you don’t have to put the curd into the jar immediately after they come out of the oven? It looks like one of them is handling the jar at the end there, so I assume not.

    You can also sterilize your jars by simply boiling them for several minutes. Put the pot on before you begin and they'll be clean by the time your filling is ready. They dry almost instantly, so no need to worry about wet jars. ;D

    You guys test kitchen gadgets all the time – but don't use a simple (manual) citrus juicer? You get all the juice out with much less effort because you can lean on them and use your body weight and they are 2 Pounds at most at IKEA (other kitchenware stores are available). I would recommend one that isn't just a wooden stick but has a bowl to catch the juice as well. Otherwise it isn't much easier). Maybe give them one for the next gadet video and watch their faces light up!

    i'm a bit confused… could some nativ speaker please help me? why is this called curd, when there is no actual curd in it? by my understanding so far curd is what we germans call "Quark" and it is a dairy product.

    thanks for this, we somehow ended up with 6 clementine/mandarin trees in the yard over the past couple of years and there's never enough things to do with the massive and endless end of year crop. I'm gonna go make about 50 jars of this.

    Hey hey! So I tried the curd as described here… Taste wise it was pure perfection! But the consistency (quite runny) and the tiny egg white bits were annoying. Then I tried it another time…
    SO here are my tips for the perfect clementine curd: first beat the butter and sugar with an electric mixer, then add the eggs one at a time, until everything looks smooth. Only then add the rest of the ingredients… it will look a bit weird, but will come together nicely after heating up. Since the butter and the eggs are combined, there won't be any white bits!
    For a thicker consistency, I added about 30g more butter and cooked it a bit longer 😉
    Tadaaaaaa… there is the perfect curd!

    I was in a Skills Canada competition in April for baking, and we had to ice a cake, make a bread, and a lemon meringue pie in six hours. Anyway, the judge who had been a baker for something like 40 years said that, when making lemon curd with corn starch that it is best to add your fruit juice at the end after everything has thickened because the acid from the juice actually reduces the thickening agent in the corn starch… not that it applies to this recipe but thought it was a helpful hint

    Looks wonderful, will definitely try it. But just one question: Peels of citrus fruits from a regular supermarket are usually laden with pesticides, waxes, etc. And in almost every English cooking show I have watched the cooks just grate the peel in without ever telling if they at least wash the citrus fruits, buy organic, etc. Could you please tell us what you do?
