Just how many years did James have to spend working and training to be a chef to work out that a spice mix has spice in it. I know he was referring to the use of the word spice when it's used to describe heat but still. There is heat from Ben with there is spice from James.

I learned from Alton Brown that if you're making an apple pie, it's nice to grind up some Grains of Paradise (or Alligator Pepper) and toss it in with your apple mixture.

James got two points for not specifying which cardamom pods. I would have given him half a point for not specifying a type of cardamom. Being more specific in the identification is more skillful. Great format for a video. I enjoy it when Ben is in the hot seat.

I blend my own so I got Bebere. love it. Also Ras el Hanout, so good, refined taste. Jerk, Louisiana or Indian base. Experiment. your tastebuds will thank you.

I'm pretty sure that James is Mike's older gay or autistic brother. Don't get me wrong I prefer James over Barry any d*** day and I think James brings a whole lot to the crew I wish he would come back. I'm sure it's a lot for James to come back and do even a show here or there but I would love to see an entire season of James come back and school everybody.

So the Ethiopian cuisine is heavily influenced by India due to the 2000+ year old sea trade routes. Hence their spice blends and use of spices has a lot of similarities…

It would be interesting to know what spices are local to Britain before colonisation started. Because of movies and the history lessons we learned in school, westerners went to Asia for spices.

Fenugreek is not a funny Greek. Grains of paradise somehow isn't rice. Stone Flower isn't even a flower. Mace won't bludgeon you in the face.

I lived in Tunisia my entire life and I have never heard of this spice blend nor saw that dish, Tunisian couscous is usually red with the exception of borzgen couscous and masfouf (a sweet couscous) so this is quite a confusing discovery for me.

Berbere spice blend is indeed fantastic. The flavours aren’t fully released though, until after some 3-4 hours of cooking. Preferably with extra fat as it binds the spice.
Ethiopian “Wat”
raguis a great dish you ought to make!Sweat 1 kilo of chopped red onions in 350 grams of butter and 4-5 tablespoons of high quality Berbere. Add 1 kilo of beef mince and brown it together. Add 1 kilo of chopped tinned tomatoes. Season with salt. Simmer for 3-4 hours, preferably longer. Do not skim the surface, the taste is in the butter.
Serve on a plate with Injera. If you don’t have access to injera or will not make it yourself (not that hard once you get the hang of it!), serve it on top of a thick slice of white bread instead. Serve with loads of vegetables. Sliced banana, boiled egg-halves and sour cream. A truly amazing dish!

The moment Ben said "It's bitter" in Poudre de Colombo, I immediately shouted fenugreek seeds. I don't know of any other whole spice that adds bitterness along with flavor into a spice mix.
