    I Know I'm late to the video, but i just have to say. Mike JUst made a gratain the American Southern way. Not that it doesn't deserve to win, but all the tik tok advice was to make it American style.

    It's shockingly hard to find proper cream in France.

    I love how he says with confidence that traditionally it would be just milk, no it wouldn't, traditionally its made with cream lol, what a bafoon.

    Edit: for anyone making this recepe, do not ever use milk.
    Re-edit: Dude makes a vertical dauphinoise like, i'm glad he lost this was such an abobination.

    use charlottes potatoes and a bit wetter more cream also add some artichoke …..still will defo give Bens a go !!!

    A mix of these two would be AMAZING, but honestly the tiktok one just doesn't look appetising? Which is half the point of good food imo

    As a very average home cook I would never think about making potato dauphinois because in my mind I would think that being such a rich and elaborate component on the plate it would need to be the main focus whereas I’ve always believed and have been brought up using the 3 part technique, so every plate of dinner needs a protein of some kind, a form of carbohydrate and a healthy portion of vegetables. The meat imo has to be the star of the plate because it’s often the most costly item to purchase but also has the most variety of cooking methods as well as spicing and seasoning that can make a very simple cut of meat tender, delicious and have the taste from any culture around the world, but with the dauphinois being so fancy and extravagant it would take the focus away from the meat which I’ve never experienced on a plate of food

    I don’t know if it’s just me but I’ve always perceived potato dauphinois to be a luxury item that I’d never dream of making but they’ve always showed that it’s actually an easy dish to make. I guess it’s like how we all grew up thinking that Ferrero Rochers were really expensive because of the glamour factor

    My best, traditional recipe is so tasty, and simple, it would be boring to you: russets, garlic, rosemary, potatoes, butter. Done. The rest is technique.😋😋😋👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻🤗🤗🤗💋

    4:51 for many years, I have alternated sweet potatoes with Russets (or similarly starchy). The result is love;y, and skin-on works nicely. I don’t do that, but… BTW: 7:45 I agree with Ben. I also stack my potatoes upright. I alternate from this and that with cheese. I believe a great potato gratin must have bunches of cheese—it is the American in me. Mostly, it is about the cream, and the cheese on top. 😋😋😋

    Can you not press dauphinois potato aswell as that’s how I was taught to make however I’m not a chef anymore and used to make 500+ portions at once

    I make a version like Ben’s for Thanksgiving. Been doing it now for 10 years. It’s a cross between Julia Child’s recipe and Hasselback versions. Always a hit. No rosemary or sage for me. I like to keep it simple where the cheese and potato are the highlights.

    Ebbert missed what a gratin dauphinois is.
    The "normal" tiktok one was also wrong, adding lard and cheese was unnecessary. At best it would be cookedd with duck or goose fat to add some meaty flavour to the potatoes.

    best Potatoe dish I've ever had was a Idaho baker Potatoe over a 1 pound, bake cut in half, wrap in tin foil, butter, sour cream grated cheddar chess, chopped raw onion, salt pepper and stuff and pile high with Texas brisket with barbecue sauce.

    I apologize for this (im sure this is already answered somewhere in the video, and probably common sense to most), but is this basically what most in the U.S. would call an Au Gratin (usually the kind of potatoes most only serve at Thanksgiving/X-Mas… But I am the biggest fan of Au Gratin with lots of Cheese Sauce, and of course the side pieces are the best where it has bits with some crispy pieces….
    But when I heard Ben AND Mike say they were adding NUTMEG I was like, CANT be… but it IS, ack, so confused!!!

    If I was in a restaurant and got a single-serving ramekin of potatoes that looked like Ben's, I'd think the chef had done something pretty amazing with potatoes. But if I'm at home and want some yummy comfort food then I'll go with Mike's every time.

    Both of those dishes look absolutely amazing but their recipes are like saying you can make the best carbonara by adding crème fraîche and parsley lol
    It's going to taste amazing, but is it a gratin dauphinois anymore ? 🤔
