Recipe-less is awesome! It's EXACTLY what I do. My favorite part is Mike and Jamie "figuring out what you're making" and the logic of Swiss-banking-millionaire's shortbread is fabulous. Wouldn't you be able to mix the batter more safely by mixing a small bit into the flour to lighten in softly, then fold in the rest after? Like a mousse?
