Bun Bo Huê : soupe vietnamienne aux vermicelles de riz – Cooking with Morgane

Découvrez Bun Bo Hue, une soupe originaire de la région de Huê au Vietnam.
C’est un succès garanti grâce au bouillon parfumé à la citronnelle, aux morceaux de viande de bœuf et de porc, notamment les pieds de cochons.
Un petit condiment bien relevé à ajouter à la dégustation complète ce plat.

Ingrédients pour 6 personnes :
800g de vermicelles de riz
1kg de gite de bœuf
1kg de plat de bœuf
500g de basse côte
3 pieds de cochons
8 tiges de citronnelles
2 oignons
1 gros et 2 petites échalotes
6 gousses d’ail
de l’huile
du sel
du poivre moulu
1 c à s de sucre
6 c à s de sauce de poisson
1 c à s de pâte de crevettes
100g de fleur de bananier
6 branches de phak phéo, c’est de la menthe vietnamienne
6 branches de tito, feuilles violettes
6 branches de menthe
10 branches de coriandre
2 ciboulettes thaïes
des piments frais (facultatif)
5 feuilles de salade
2 citrons verts
200g de soja
3 c à s de paprika
1 c à s de poudre de piment doux
1 c à s de poudre de piment fort
