Tomato Frittata Recipe – Made Personal by SORTED

Mike wanted a protein heavy breakfast that could be a healthier alternative to a fry-up… which he claims he might chose as his final meal on earth! This is what we came up with, subtly spiced egg with smoky bacon cooked inside of an edible ramekin and finished with fresh avocado. Mike is in food heaven!

    Everyday? Rage. Special occasion? Either steak and eggs Florentine or a chili & cheese omelet.

    My Made Personal meal is as follows… And yes, before you ask, I am an American, which will become apparent soon enough.

    Start with between 8 and 12 ounces of beef mince, a couple handfuls of bagged shredded cheese(There's a reason), some dehydrated onion, and keep some Ritz crackers to hand just in case.

    Mix the beef and cheese and dehydrated onion(You can find it in the spices aisle) together, the onion and the powder used to keep the cheese from sticking together or going off will help to stabilize the beef mince and keep it from breaking apart by soaking up a lot of the moisture. If it's still not enough, crush some crackers and throw them in as well(four should be More than plenty). Ball them up into two separate balls after thoroughly mixing by hand(not Too much, as you'll screw up the meat texture).

    Put both balls into a hot pan, let them sear on one side, then flip and give them a gentle press until they're roughly burger-shaped. Cook off covered until they're done(you MIGHT need to flip once more due to the change in shape, but just keep an eye on it), and serve on your preferred buns with your preferred burger toppers. For me, it's a slice of pepperjack, long sliced pickles, mayo, and sweet-and-spicy mustard. Maybe a bit of salad on if I'm feeling up to it.

    It's a regular go-to meal because the prep is minimal, the cook time is short, and I can eat them throughout the day, if that makes sense. Bring them to the desk, and just… eat slowly over the course of a couple hours.

    this was absolutely delicious, my whole family loved them!!! I will say that smaller tomatoes are better, Two large tomatoes split between four people was a perfect breakfast. 🙂

    My favourite thing for breakfast is probably some kind of homemade pancakes. Usually blueberry or apple. I'll just make a bunch of them and throw them in the fridge and pop them down in the toaster for a quick breakfast!

    I made this recipe today. My dad really liked it, my brother not so much as he doesn't enjoy tomatoes. It was so-so for me. From the video the tomato doesn't look like it came out as watery as mine did. I'm thinking I should grill it first to get some moisture off. I also added mushroom and sausage bits instead. Will try again this week.
