    Subsistence cooking has been responsible for many of the best dishes ever created. It's truly amazing how inventive people can be when they have no other choice. They either created something new and tasty or ate only to survive and although eating to survive will probably keep you alive enjoying the food you eat and getting what you need to survive makes living and so survival far more likely and enjoyable. Especially during hard times community is important and eating is something that can very much pull a community together and good food that's tasty can get you through things that otherwise might pull you down.

    All I know about Brunei is that the Sultan is a massive 0etrolhead and has the largest car collection in the world with some never seen before cars coz he bought all of them lol. However now I know a dish from Brunei too which is amazing considering I ve never even been close to Brunei and bearely know where it is

    Love this format. In certain parts of Papua New Guinea we make something very similar to ambuyat and is known by different names depending on what part of the country you're in (berem is what it's called where I come from). The key to getting the right consistency is to not use too much cold water (take 3 is probably the closest) then pour in boiling hot water (about more than double the cold water) and stirring as you pour. Once it starts to thicken, stop stirring and fold through. It'll go from white liquid to a translucent "gloop" and the consistency should be that of slightly runny jello.

    P.S. The amount of cold water used will determine the final consistency. So less cold water a more firm "gloop" and vice versa.

    Indonesia, specifically Papua and Maluku, has a similar dish to Ambuyat called Papeda. We eat Papeda with Ikan kuah kuning (fish with yellow broth). We also eat tempoyak. Never knew that Bruneian eat Papeda with tempoyak. Learned a new thing.
