Now knowing these guys more over the years,
Mike would make the chinese spice burger
Barry would make the french inspired one
And Jamie with a classic beef & mushroom burger

great blends but you built it wrong. you start with the head of the bun on the bottom, burger, onion (if you're using,) greens, tomato then the heel on top with whatever condiments you like. the head's thick enough to soak up the burger's juices, making it like an aus jus dip. the continued warmth and steam of the burger flows up to continue to cook/caramelize the onion. use a large leaf lettuce and place with some overflow going over the sides. place your tomato. add the heel and wrap the extra lettuce around it, the lettuce both protects the tomato from the residual heat of the burger while driving the tomatoes juices into the heel, keeping the burger together while compensating for the crunch of the lettuce that got hot and welty and keeping your hands for getting greasy. doubt the boys will ever see this comment on a 4 yr old vid. but to any newcomers, i'd like to hear your thoughts on your best burger builds.

I'm actually wondering, while watching, whether you can fuse Mike's beef&shroom burger with Jamie's French-inspired one (adding cornishons and dijon mustard to the beef and duxelle patty mix for example)
