I never really liked a serrated knife. A good set of carbon steel with a fine edge has always served me well. I received a set of Henkels 4 star from school years ago. I couldn't get beyond the handle of the 5 star as the curvature of the handle wasn't comfortable for ne. After almost 25 years and counless sharpening, my paring and utility knife are no more. My chef knife is more of a boning knife. Hindsight being 20/20, I never would have had a professional sharpener take care of the blades as they geound the blades down quickly and had major retailers as clients. $200 chef knife vs $50 chef knife. Held to the same standard. At least I still have the block with the brass plaque with my name and date on it…

Was always amazed when I watched my Grandmother and Great Grandmother peel a potato with a paring knife and chopped while holding it. Their peels look same as mine with me using a peeler. 🤯🤯🤯😍😍😍
