    Big believer in mini-choppers as you can toss the components in the dishwasher. However, I can’t get behind subbing noodles for pasta. The experience is so different. But I love that you guys bring easy cooking tips and tricks to the masses and that’s brilliant. By far you’re my favourite channel and dare I say the only one I’ve had notifications turned on for YEARS. You guys rock! Oh and I also have a huge crush on Jamie that I know sadly is fruitless 😂

    Hearing a chef demonstrate and explain the methods, tips, tricks and hacks to speed up his processes and keep him moving at a rapid pace so he has the time to do more things or give him time to think past present and future without having to multitask

    I would say, if you have really good knife skills, you will find that mincing garlic by hand is faster and less fiddly, particularly if you're working with large quantities.
    3 cloves in on the micro-plane and my arm will ache, whereas I can mince a few full bulbs and be perfectly happy.

    7:38 UDON. Udon has a radically different texture from spaghetti.

    3:14 This is helpful, if one enjoys the texture of udon. Not all people enjoy that texture.

    My goodness. You do know puttanesca essentially means lady of the night pasta? it was already a fast meal to be eaten between clients. It needs no microwave and you really need to leave true Italian food alone. Please stop messing with Italian food, It is pure and unchanged and while I argue so much with Italians, I respect what they keep as sacred, regional and precious. So much of the world's food has been lost to corporate greed and youtube hacks

    I like how with the garlic he went from "grate the garlic with the skin on? You're wrong!" to "My favorite tip was grating or garlic, why have we not done that before"

    I have a sneaking suspicion James didn’t tell Barry the actual time he got, I feel like he let him win without making it too unbelievable. Barry is basically a big kid and seeing the joy he had when he found out he ‘won’ was wholesome af and James isn’t just a sarcastic ginger douche all the time 😂😂

    0:26 CBA2 Wait: Udon Putanesca
    1:53 Pro-tip # 1: Pre-heat everything first, or in this case, boil a kettle
    2:31 Pro-tip # 2: Stock-up, enhance your stock using basics to a few extra ingredients like anchovies
    2:44 Pro-tip # 3: Use a fine grater, useful for grating an unpeeled garlic, citrus, or parmesan
    3:14 Pro-tip # 4: Use speedy substitutes. Udon noodles (3-4 mins. cooking time) can be used as substitute for pasta (10-12 mins. cooking time)
    4:10 Pro-tip # 5: Use a mini chopper. It is really good for making sauces, pastes, to put loads of flavour in
    4:56 Pro-tip # 6: Save your pasta water, to loosen your sauce just in case
    5:07 Pro-tip # 7: Use tongs to transfer pasta into sauces rather than draining them in a colander

    Udon Putanesca Recipe Instructions:
    ✔In the recipe, grab a mixing bowl, add the anchovies, olive oil, tomato puree, and sugar then grate in the garlic cloves
    ✔Give it a mix then place in the microwave for 5 mins.
    ✔Get another bowl and place udon noodles in it. Pour boiling hot water and the noodles will cook after 4 minutes. Use the timer in the microwave to time your noodles as well
    ✔Put your parsley and olives in the mini-chopper then pulse
    ✔Get your sauce from the microwave and using tongs, transfer the noodles to your sauce without draining
    ✔Transfer the noodles to the sauce using tongs, then give it a mix to let the sauce coat the noodles
    ✔Plate it up then grate parmesan cheese on top

    Nobody should ever spend ages on puttanesca, it's title means 'whores pasta', a dish that was thrown together just before a cheating wife's husband came home, to make it seem like she'd been cooking all day, instead of shagging.

    Eh… the mouthfeel of pasta is important to the dish. That's why there's so many different shapes and varieties. You can't just say udon noodles can replace spaghetti. And pasta water is great to use, when it has been used to cook pasta and not just reheat udon noodles. This seems a bit silly.

    Best time saving trick. Make large batches of stuff you can do beforehand, beforehand. Like amazing tomato sauce, it really needs time to come together and thicken up so it's not wet. You can freeze and even can that stuff. Other one is ofc bolognese as we are going the pasta route, which really needs a long time to get proper consistency and taste. It's not a lot of work, you can do huge batch at the time, it just takes a long time you usually don't have.

    With the udon noodles, you can also use the "fresh" pasta from the fridge section and cook that the same way. Maybe put it in the water before the microwave to give it a little longer.

    My husband tried the tomato puree and anchovies in there own oil in the pan after watching this, he was impressed with the tips!

    I am trying to find the fine hand held grater and wonder if you could suggest one @sortedfood

    i loove udon noodles, not only are they quick the chewiness is fantastic
    to be fair they're probably more expensive than dried, but hey that's still like $5 for 4 hefty portions where I am

    I prefer very fine pasta, like Angel Hair, so I don't think I'd care for udon. However, if you can get fresh made pasta at the store, it only has to boil a few minutes, so you could boil water in the kettle, then pour over pasta in a saucepan on the stove top, and still save time. My biggest timesaver is cooking up a load of ground beef and freezing it in small batches: easy to thaw and add to pasta sauce, top a taco salad, make chili, add to an instant noodle side, etc.
