    Omg….why is your Marmite khaki coloured and not black like the nummy Marmite made here in New Zealand? Yours looks more like the Aussie Vegemite, which is yuckity yuck yuck 🤢

    This is one of my all time favorite foods.

    It also does really well in a crock pot. Same process as Ebbers used to prep the onions. But put them in a crock pot on lower over night. A great balsamic here in worth it for the complexity. In the morning, add stock and get up all of the browned down onions. Instead of vegimite, use dried shiitake mushrooms. Grind them to a powder (a rinsed out coffee grinder works great) and add to the stock. A dash of porter beer or coffee also increases the complexity without overwhelming the stars…those beautiful brown onions. Leave the crock pot to cook all day. When you get home, add to bowls. We always pre-toast the bread and push a piece into the bottom of the bowl before adding the soup. Finish as Ebbers did. I don't usually add the baby roasted scallions. I just dust lightly with more dried shiitake powder and add a generous sprinkling of fresh parsley for that fresh herbal tone.

    There is a local sub shop that bakes their bread and roasts their meats in house. My late sister worked there years ago and suggested they do a house French onion soup using the roast drippings. It is beautiful, exactly like this but with beef stock.

    My mum's signature dish is french onion soup; she goes traditional with it. The kick of flavor for her is a bit of conac cooked into the broth.

    I'd say add in a stick of cinnamon and some cloves and a few peppercorns and man does it elevates it to another level. I made this for my mother when she was sick and she loved it.

    I was advised when making French onion soup To avoid using 'Red onion' Due to it making the broth turn a gray-ish color.

    I really like how they remind us that this is not the most traditional way of making it, as with many of their other recipes. It's a variation, that makes it easier for regular people who are not chefs or have a hard time making time for cooking. If you want traditional recipes, you could look up Gordon Ramsay or Jamie Oliver for instance. That's what I love about Sorted. They make easy cooking while still teaching you new techniques and skills.
