    I know this is an old episode, but I would do Bens version but with mince and throw it in the slowcooker on low for two days-ish)

    4:19 My maternal line has been in texas for 176 years. Mirepoix is not a part of chili. The beans are a different issue.🌸🌸🌸🤗🤗🤗🫶🏻🫶🏻💋💋🇺🇸 7:20 Again? With the mirepoix. Where did you get that? The chocolate: yes; the cinnamon: yes (Cincinnati style); but that mirepoix is strange. Try a bit of fish sauce, as well. Just another layer of umami.🫶🏻🫶🏻🫶🏻💋💋💋💋💐🇺🇸🌸

    Jamie's is closest to Cincinnati style chili. He should have served it over spaghetti with shredded cheddar and onions on top, then the "Chili 3 Ways" episode would have had a five-way!

    Ben's was certainly the closest to what I'd call chili. Pity he didn't brown the meat then dice it a tad before throwing it back in. No one wants to chew on their chili that much.

    Ben's is closer to how I do mine, it takes longer but it really is a superior method. I'm a chipolte chilie guy, not tremendously spicy but excellent smokiness that only the people who can't handle any spice can enjoy. Yes I am an award winning chilie cook, specifically once for the amazing Third Coast Comics Chilli cook-off 😜😜😜😜

    Faaaar too few chilis. For a pot of chili (which I make about once a month during the cold months) I'll use about 5 chili de arbol, 4 guajillo, 2 chipotle, and a small can of hatch chilis. I'll either steep and blend the dried chilis, grind them, or do a mix, but dried chilis are the way. Powder just won't do once you've used real chilis.

    New Mexico native here, and I have to say…I'm a bit horrified! Cinnamon? Carrot? CELERY?! I guess you can do whatever you want, but every chili I have ever had has only chili powder, cumin, oregano, and paprika, with the oregano and paprika being optional. I have seen that Cincinnati style chili uses cinnamon, but…well, Cincinnati?
    On the cinnamon ingredient, David Freed on Quora says, "It's a bit like having strawberry ice cream with a malt vinegar and olive oil dressing… it's a strange concept (IMHO)."
    Or, like pineapple on pizza…ugh!

    95% of the time I do the quick one, but I do let it simmer for an hour or so.

    I guess you could use the insta pot now. Cut the cooking time. 5 hours is rather long in the oven.

    The Shin one has the same stuff as mine recipe that i put in my Instant Pot with black dried beans,
    for more flavor i add;

    -two teaspoons of molasses,
    1-2 tablespoons of a quality bbq sauce with good smoke flavor
    -half tablespoon of maple sirup
    -Aardvark hotsauce the red one 1-3 teaspoons, you can't make that sauce for the effort it takes to make
    -Lemon juice enough to balance the sweet so you get the sweet sour balance

    adjust the beer/water for the Instant Pot, and hit 30-35 minutes of cooking, the time plus preheating gives you the shin version within an hour with dried beans and better flavor then slow cooked…

    I'm from the east coast so I'm not a big fan of beans in chili… and I'd eat the shit out of all these chilis. They look so tasty. Definitely gonna try to make the chef version one of these days.

    Fun thing to do:

    Make up a double-sized batch of Jamie’s chili spice mixture, and keep it in a shaker or bowl next to the stove:

    Sprinkle it on the top of an omelette or scrambled eggs in the morning. Bonus if you have some ham in the same pan.

    My doctor thanks you too. My diet consisting mostly of potatoes, carrot and pasta and stock was not doing me much good and I was miserable. Now I'm much happier and diversified my diet heaps

    Ben’s with rice and roti. I can’t buy those fancy dried chillies in Australian supermarkets sadly. However, I like to use Kashmiri chilli powder (via EBay) as it is a very fragrant, flavoursome and red, mild chilli powder as I love the flavour that chilli offers but I prefer mild heat so it doesn’t overwhelm all the other tastes.
