3 things with the queso: the can of green chiles are anaheim chiles that have been almost pickled. They bring a bit of heat, but mostly bring a sharp tang. I also think that Antoni used a bit of white American cheese because it has emulsifying salts that make a cheese sauce like a queso beautifully melty and stringy. And based on the wording in the recipe, and the dish's origins, you needed to use Mexican chorizo which is a fresh sausage that is able to turn into crumbles in the pan rather than Spanish chorizo which is a cured sausage that will never really break down like the picture shows.

I don't know who did the closed captioning for this, but Mike is not "Quinn". I know it's "funny" because 'lol, they said 'queen' a little like 'Quinn' when replying to him', but CC is not for adding jokes and such to content. It's for those of us that can't necessarily hear that well and are trying to follow the video regardless. I spent a while trying to work out who "Quinn" was before realizing the CC was calling Mike "Quinn".

There is a world of difference – and heat level – from canned green chilies and jalapeno or small, strong/spicy ones. The green chilies from New Mexico (often called Hatch Chilies) are quite mild and great in many dishes.

or you could just add a teaspoon of corn starch to the milk pour into your cheese and it will smooth it all out and make it a sauce instead of clumpy looking cheese. you could say I cheesed that recipe.

Great video, guys! I bought the book because I really enjoyed watching Queer Eye this year, and I am totally in love with Antoni… So cooking while looking at those pictures, is quite distracting, but I'm committed to doing the 100 recipes =)

In North America we have “green chiles” that come in a can. They taste similar to onion or garlic and have very little heat in them. I think those are the type of green chiles Antoni is referring to. I wouldn’t be surprised if they are hard to get in the UK. They may also be referred to as “hatch green chiles”
