    Making ramen and making soup using various food ingredients was impressive and delicious, but the enoki mushroom used as a garnish has a bacteria called listeria bacteria, and I think it would be a little dangerous to use it raw

    Everyone knows the best food always requires the most time, work and effort possible dedicated to it, especially if it’s something that’s a long slow cook but even though I’ve eaten a lot of ramen bowls at a variety of restaurants I had no idea just how much time and effort went into making a really tasty soup base !

    Ben probably made the better broth, but he also spent 2 days doing it, which I think should disqualify him.

    I remember seeing this when it first came out. And I'm back again to watch it. I still use these recipes now.

    That is a serious battle. I wish they would have focused a little more on the actual ramen noodles instead of just using some dried stick noodles that didn't look quite right. Miso paste and sesame oil should not be cooked much. Some wood ear mushroom and bamboo shoots would have been nice additions. Perhaps a slice of fish cake. The pork slices to me seemed a bit thick – a little awkward to eat in a bowl of delicate noodles. More slices, thinner. I noticed that Ben put his spring onions in the bowl before the broth and noodles – probably better on top as a generous fresh garnish to soften in the heat of that fatty tonkotsu broth. The sake pairing is great but also a lovely toasted rice green tea on the side seems necessary. The swift ramen noodle slurp is good to practice with ramen (not when you are sharing bowls as a group I guess) to not only cool down hot noodles but like with wine to get more flavour as you inhale (and it is not considered rude). Anyway, this was fun to watch. Ramen preparation takes a lot of time to master and it sounds as though it all tasted great.

    Ben's ramen dish sounds perfect for a winter night at home by the fireplace with snow falling outside. James' version is for the springtime and sitting out on a patio surrounded by flower and herb beds.

    And in my perfect world I'd get to have them served to me even though I have neither a fireplace nor a patio.

    I watch this video multiple times because 1) it's really good and 2) it has James gently throw Barry to the ground when he's being annoying. Hope he got a brownie point for that.

    Both ramen dishes looked delicious. I must admit that I get really tired of Mike & Barry being so mean to Jamie. At least today, it was behind Jamie's back. Do they not realize that the reason that Jamie was ahead was because he tries so hard to improve?

    I'd give James a brownie point for really nice presentation o-o
    Would have a hard time deciding which one I'd like more just from looks and knowing what's in each bowl (trying not to let my bias speak lol). Ultimately it'd be down to the broth and can't taste that so..

    The color of the eggshell means little to flavor of the egg. The chickens menu means much more …a true free range egg yolk will be very orangey…

    I know I am a bit late for the party but I have to add something regarding the "scum" of the boiled meat. This foam is coagulated protein and fat from the meat/bones which would degradate into aminoacids that adds a little bit of depth to the broth. The reason its discarded till today is that in the past some people spread lies that those are "impurities" and are harmful. The truth is this foam will add aminoacids to the broth AND as a side effect make the broth cloudy but since this is a tonkatsu broth which will get cloudy regardless (because of the same protein degradations from the rest of the meat and fat) it really doesn't matter. I hope Ben and James won't continue to spread this notion of "scum" to the masses 😉
