    So, since I haven't seen anybody comment yet, Mike asked if he can roll out his dough again. The answer is yes, technically. HOWEVER, if you do, they will not be as tender. More gluten will be developed when you knead it back together, and they will become tougher. So if you want the batch to stay the same amount of tenderness, utilize as much real estate of your rolled out dough as possible. Coming from a pastry arts major, it is a pain to see people re-roll dough and then complain the second batch isn't the same as the first.

    4 years later, Here is a pro tip from a pro baker: after proofing your dough put it in the oven for 5 minutes till golden. Also no big holes just cut tiny holes inside 'em and then widen carefully with your hands 🙂
