    McD's French fries used to be cooked in beef tallow, not vegetable oil. .
    The best fish and chips were cooked in tallow.

    Invest in some shower caps for those recipes that you know are going to be smokey. Use them only when needed, pull them off once the smoke has cleared, but it'll save you a headache.

    I've only tried Lion's Mane and Oyster mushrooms because a friend grows mushrooms.

    This was thoroughly enjoyable. Lots of interesting things going on, and the restaurant fits the channel well. Eliminating food waste, etc.

    Cod cheeks and cod tongues are eaten in the fishing communities of eastern Canada. I don't know how they're prepared, but I imagine it's like you guys cooked the cod head. I don't know whether they actually like it or not, or eat it because they sell the rest of the fish.

    The mushroom dish and that dry aged dairy cow steak. Those looked absolutely stunning. I would 100% want that steak over a nice bowl of white rice as a Gyūdon or as a replacement for Roast Beef on a Roast Beef Poboy.

    I'm going to have wonderful dreams about that food for the next 6 months. I wonder if they'll ship the food and chefs to the USA. And now, i'm going to have dreams about that. Lol. Truly wonderful, innovative way to go guys. I wish you all the best.

    love the idea of letting the cow live (a pastured) life as long as possible, so that when it's time for the "mercy", the animal has had happiness, prosperity, family etc and is culled with care and gratitude by those who will be nourished from it.

    I had a galician blonde rib eye and it was the best steak I'd ever had. However it was very expensive.
