As a Malaysian, I don't recognize this so called "Malaysian curry". I think what Ramsay was trying to replicate is a classic Malaysian dish called "Masak Lemak Kuning" or yellow coconut curry. But he had overcomplicated it to a point beyond recognition. The authentic recipe would only consist of blending fresh turmeric and chili, boiling them in plain water (not stock, no sautéing), adding coconut milk, lemongrass, turmeric leaves, salt to taste, and a choice of souring agent (small starfruits (belimbing buluh)/ unripe mangoes/ asam keping (this will be harder to find in the West)/ cut tomatoes etc.). Let it simmer and add the protein and/ or vegetable of choice. Definitely no soy sauce. Soy sauce and coconut milk do not go together in any Malaysian dish..
