Mushroom, Leek and Tarragon Pasta | Gordon Ramsay

A simple dish of pasta with a creamy mushroom sauce and fresh garlic bruschetta. Leeks are a fantastic ingredient – cheap and easy to work with and they give a subtle savoury flavour.

    1. Put the water on to boil.

    2. Meanwhile heat olive oil in a frying pan, add sliced mushrooms and toss for 10 seconds.

    3. Add 1 large minced garlic clove, then add quartered leeks and cook all the water out of the leeks.

    4. Add chicken stock and cook until reduced by half.

    5. Drop lasagna sheets into boiling water.

    6. Turn the heat down and add 2 tbsp cream. Bring it back to a boil and let it simmer for 3-4 minutes.

    7. Turn the burner down again and pull the pasta sheets out and lay them into the sauce. Turn the heat off and let the pasta absorb the sauce.

    8. Add fresh tarragon.

    9. Butter a couple pieces of bruschetta and rub a garlic cloves over them. Heat olive oil in a frying pan and toast the bread. And serve with pasta.

    Nice job. I am a Chef Instructor and you get an A on the prep and finished mushroom Leek Pasta. . Add Parmesan Reggiano cheese and grilled chicken. Imagine the explosion of flavor in your mouth? Chefs use our spatulas.

    Chef, this is fabulous! I’ve been doing it now for a little while & doctoring with shallots & leaks. However, we added lobster and shrimp and it took it to a whole different level. Your the best!

    I've made this several times. I need a protein with every dinner and my favorite is shrimp with this. A white fish will work too.

    Just made this today. I absolutely hate mushrooms, but this recipe was so earthy & delicious. (Of course I picked out the actual mushrooms at the end) If your going to use other noodles, I’d recommend angel hair noodles. Fettuccine noodles where a bit to thick for my liking.

    I saw the show on TV recently where you allowed the food critic to get on and tell , and show, how "great" it is to eat from dumpsters behind restaurants.
    Are you not aware that this is a HEALTH HAZARD? Food is not "just"" thrown away because it is not used, it is thrown away because of Health
    reasons as well. On top of that, in a dumpster it is exposed to BUGS, MICE ETC. WHICH ARE INCREDIBLY UNCLEAN/CONTAMINATED AND CARRY DISEASE!
    Don't you have food banks in Europe? PLEASE, if you are going to try to help people who are struggling to put food on the table, PLEASE for the love of God
    and of your fellow man, tell them about food banks, don't encourage them to get food from dumpsters! I''m pretty sure local restaurants where we are
    donate the HEALTHY left overs to charity's in the area that help the poor and homeless. I was so appalled seeing that, and had to stop and PRAY for the
    guy who was eating that food, despite the fact that the program probably did not air the same day. SMH.

    I love your cooking when it doesn't involve unclean creatures, and I have tried some of your recipes and loved it. I am sure you would not intentionally misdirect people,
    so I wanted to make you aware.

    A far better way to avoid food waste is to get the farmers to follow biblical principles – farmers are told not to go over the field more than once, not to go back to make sure they got every single bit of produce from the fields but to leave the remaining for the poor… and allow the homeless and the poor to glean from their fields after they have harvested Also, restaurants can donate to charities that feed the poor and homeless from the healthy food that is left at the end of the day so it doesn''t go to waste, doesn't spoil, and isn't contaminated by mice, bugs etc.

    Please don't take this comment down. Everyone makes mistakes, and I am sure you are a lovely person seeing how much compassion you have on restauranteurs (sp?) who have fallen on hard times. I hope you will leave this up so people can learn from it. Sadly, not everyone thinks things through concerning dumpster diving, whether it's for food or things they hope they can use or resell.

    One of my fave recipes Gordon has put up. I personally also add some pancetta, which works amazingly well with the mushroom/leek/cream sauce
