Chefs Review ‘LIFE CHANGING’ Kitchen Gadget | Sorted Food

Yay! We finally found something James approves of!! Sous Vide is French for ‘under vacuum’ and is a method of cooking where food is placed in a sealed plastic pouch then put in a water bath to cook for a long period of time. Of course the chefs are going to love this one.

    Only used about 6 times so far but food turning out great. https://www.youtube.com/post/UgkxK2YRU9uBOXzuIEV660Qo3sX7dJDJLg72 Nice tender roasts. You do want to get a lid to go over your stock pot to keep water from evaporating. I've used it for 6-48 hours with lots of luck. A lot is trial and error to figure out since thickness and cut help determine the best time. 135 always gives a perfect med (pink all the way through). I cooked frozen solid 3 1/2" roast for 48 hours … it was so tender its almost falling apart. Nice to put it in and just forget about it, with silicone lid I didn't have to add water at all during 48 hours.

    I'm getting one. Lots of YTube demos. It's missing the blow torch to produce the browning. Oh, some weights to keep the food immersed.

    What ever happened to the spinning wheel, and different places? I keep looking, but I cannot find a thing beyond “D.”

    I miss the wheel, and the spontaneous challenges.🤗🤗🤗💋💋🇺🇸🌸 it is clear, that James is not into my game, but I would eat with him, any day, James has the most beautiful palate I have seen.

    Having owned a Sansaire that I've used to death and a ChefSteps Joule, I honestly kinda want an Anova. My big problem with the Joule is it's IoT only, and app only/no buttons on the device just feels like such a pain, especially if the app ends up not working/gets taken off the app store. but I love doing wings sous vide.

    A good sous vide piece of kit is absolutely worth it. Also try the Joule brand. You can do a great deal with it. One tip – if you go camping, in zip lock bags prepare some things like sausages or steak or chops to stick in the cooler and then just finish them on the hot camp fire! You can cook them to perfection and then get the smokey char to finish without worrying especially in the dark, ha. Also great for dinner parties. Prepare beforehand and just finish on the pan with butter and herbs to sear. Eating straight out of the ziploc is not great – steak for instance looks grey and flabby – but on the inside should be proper if following instructions. Also works for fish and veg. All need a bit of hot love afterward.

    I know this is 4 old but I bought a very inexpensive sous vide for $48 about a year and half ago to make "shelf stable but crunchy pasteurized pickles" but read the recipes that came with it and cooked a whole boneless turkey breast that was the best thing I've cooked! With a compound butter that turkey was moist and tender and just completely lovely. Even cold we sliced it thinly and it was better than any store bought turkey sandwich meat. We've not only cooked many things since but my loving hubby went and bought me this very brand sous vide that hooks up to my phone app and it came with the big water bin and rack too. Its worth every penny.
    I made pumpkin pie filling in small mason jars and we added gingerbread cookie crumble on top when finished for "pie" lol so smooth and creamy its sinful. The cheesecake also comes out lovely.
    But you've got to try chicken liver paté in mason jars. I cant go back to the old fashioned way of making it now. Its more of a mousse than a paté but oh I can eat a 4oz jar on toasted bagels for breakfast any day!

    I bought myself a much cheaper immersion circulator, for about $50 USD, and it's a fantastic gadget. Obviously steaks get the spotlight, because sous vide steaks come out great, but it's almost indispensable for cooking chicken.

    Bought a sous vide device a week ago and holy maccaroni it is awesome! Never had such awesome meat. especially chicken is something i tend to overcook because i am afraid to undercook it. useless or not? I decide: Not Useless 😀

    i use instant pot for Sous Vide with all the other functions only pain was getting vac bags but then Aldi had a vac/sealer in the "special" buys

    I use my Anova often. I’ve had mine since they came out. If you really feel the need for that seared look, just pull out the torch (no not the bloody flashlight!). I love my eggs done sous vide. The yolk comes out so velvety smooth. You will never get grey hard boiled eggs again. Cheers from Canader eh!

    That thing is unnecessarily over engineered, it does not need bluetooth, it does not need to be digital, it does not need to be expensive.. An overpowered aquarium heater in a Styrofoam box could do the exact same task, it's not hard to heat water..

    You can use a circulator for other things than cooking perfectly too. Throw ice into cold water and chill a bottle of wine in 5 minutes with the temperature set to 0 Celsius or 32 Fahrenheit. With the same temp settings we defrost just about anything in under 10 minutes without the hot spots that you get from a microwave. But my favorite is cheap cuts of meat cooked medium rare for 24 hours. Finish with a blow torch or on a searingly hot grill for a crowd pleaser.

    Sous vide wands are great – because you don't need a deep fat fryer sized sous vide bath that you have to store. Pick a pan size relevant to what you want to cook and off you go – but you can still store the device easily when you are done. This early Anova… hmm I had one. It was great until I made it cook carrots at 88C (if I recall) … best most carroty carrots ever (they were vac packed) and then I did an overnight bacon recipe, you cook the bacon in it's original packaging and flash fry in the morning, Both of these generate a lot of steam so you cover the cooking vessel in clingfilm (ceranwrap) and that steam got into the Anova and killed it – thermostat went wild and it was unusable, They were great and refunded me and I was sad 'cos I really liked it. Bought another cheaper brand which is less sophisticated but it's done OK – although i think it's on it's way out (temp issues again). I do recommend these sous vide wands to anyone with a desire to play with some different cooking techniques Very fulfilling. I've done a Christmas Turkey Breast the last couple of years (as we've not really been able to host 'cos of the Covid thing) and it has been fantastic.

    I played with a friends sous vide that didn't require the app and it was lovely, I just set the temp and did a timer on my phone. The results were excellent (made new york strip)

    I wish they used the broiler, a hot pan, or a torch to get a good sear on the meats after the sous vide cook. It needs color and texture.
