to make a properly crisp shell, You put the hole in the bottom and rest them upside down WHEN THEY COME OUT THE OVEN, otherwise the steam stays within and you get soggy. Shock them both!

I think it would be interesting to see a video were the chef have to do a recipe that the never made before, they learn the recipe at the start of the video. And they only have a vague recipe, like really vague to make it more difficult and the normal have the right to chock them when mistake are made (hey have the full recipe fully detailed maybe a duo with another chef ?)
