    Monkfruit does have a slight aftertaste, far more pleasant than stevia, though. It also affects the texture of baked goods a bit, despite the 1:1 measure, because rather than the moisture sugar adds, you get a cool dryness of the sugar alcohols. It's wonderful in minty or anise flavored things or of course anything flavoured with rum or brandy. With vanilla or other subtle tastes, you'll definitely notice something missing. Absolutely my top choice for baking for those with special dietary needs. 😀

    If its 100x sweeter than sugar, how/why is it a 1:1 replacement? Surely you would want to use less.

    american food?! Don't touch it. Don't you know that american 'food' is filled with dirty chemicals (such as flame retardant) that are illegal in most other markets.

    I really want to try the Monkfruit "sugar" but the price is making me hold off. Being Texan, I drink sweet tea (don't hate me Brits/Irishmen/Scotsmen) but it takes a cup for a gallon, but who knows, I may give it a try.

    Actually a little correction: That "Monkfruit Sweetener" is over 99% Erythriol – a sugar alcohol like Xylitol except with less digestive side-effects. 70% of the sweetness in that specific sweetener comes from that sugar alcohol. Only 30% of the sweetness comes from Monfruit and since Monkfruit is over 200 times as sweet as sugar, you need very little of it to sweeten the 70% to 100%. Since this is a 1:1 sugar replacement it's not even remotely as useful as real monkfruit sweetener which comes at a lot higher cost (but you need very little, so it's ok – it's like pure stevia extract which you only need a knife's tip of to make something really sweet)
    I don't know how the manufacturer of that specific sugar replacement can get away with the label "Monkfruit Sweetener with Erythriol" when it should be labeled "Erythriol with Monkfruit extract" – and actually the ingredient list has the correct order since in the US the ingredients need to be listed by amount – most to least.

    I use monk fruit a lot. I have family members that are diabetic. Monk fruit has been a better alternative that doesn’t seem to spike the blood sugar like regular sugar.

    James' disinterest in the monkfruit sweetener is very interesting. Why not use an ingredient that is healthier if it functions similarly or even better? "If I'm having a cake I'm having a cake"??? If you can have a cake with same taste but fewer calories and less processed sugar that should always be a win.
