    oh goodness. a trivet is a metal tripod or a grid to put in a cooking implement…
    EBBERS ! you are using mirepoix as a trivet. linguistic precision, especially from Brits, is expected.

    I am a bit behind within the comments according to this video date so beg my pardon.But one thing i will say is that old traditional grass fat beef joints is the hardest meat to acquire in quality in this country. Years of continental cross breeding and hysteria to produced lean meat for the British brain washed the public is resulting in the joint that you see in this video. Yes looks very nice with the usual condiments but fat always equals flavour.
    I enjoyed the video.

    Would this method for roast beef work with a rib of beef? 240C for 20 minutes, and 200C for 10-15 mins per 500g.

    Mostly good, if you like your beef overdone and your carrots to smell like WW1 trench warfare. I would lose the mustard or maybe switch to dijon. English mustard even when weak tasting just has way too much on the nose. Not subtle enough. With that cooking time and temp plus 45 mins resting you are gonna have well done beef, which shouldn't be a thing in anybody's book.

    I have watched this episode of fridgecam a dozen of times already because that roast beef dinner (roast potatoes the best) looks scrumptious and amazing. Every time I get to the comment of the week segment, I always agree (and cannot unsee) the first comment!! The resemblance is uncanny!!

    Thumbs up for the polenta twist. Used it on pre-boiled potatoes and spread a veritable amount of Za'atar over them to accompany a Moroccan stewed lamb dish. Fenomenal! 👌

    1. Barry, when chopping multiple onions, you should breathe through your mouth. It helps absorb the onion vapers. 2. I pretty sure Skinny Ben isn't as cuddly as Big Ben.
