    I always panfry mine, peper, salt garlic, rozemarry and use either beef bonemarrow or duckfat.
    Mine are not as crispy as the oven method tho, so will deffinetly give it a try next time.

    When you are versing the herd it is like challenging a hive mind. The collective has a higher probability of getting some stuff right because they work their ideas throw a sounding board, although it is sometimes an echo chamber. The handy cap the chef has is they KNOW what to do snd not do, it can limit their exploration unless they force themselves out of the box.

    A family friend, who was a chemist and a vitamin nut, told me that bi carb made all your greens, really green, BUT took out every vitamin. So depends what you want.
    Green or vitamins.

    Bicarb destroys any nutritional value the veg contains. Great for colour ,crap for nutrition.

    I think I would be upset if I was presented with cornflower covered squashed potatoes. I think that the additional flavour from the use of stock really depends on what the potatoes are going to be plated with and I would question that with a roast dinner but not with steak or something else. The same applies to the choice of oil/fat and what you want flavour wise from the potato for its application. Ben shows nicely that the hacks such as the cornflower isn't really needed, but also from my experience neither is the bicarb. Drying is key as is the right potato.

    I was always told Bi Carb take out a lot of vitamins and can easily go mushy. ie Mushy Peas.

    The tastiest potatoes I made recently were done with chicken stock, herbs, and slices of lemon done in the oven. I used too much stock – it was supposed to boil off and didn't – but my goodness they were nice!

    To me the best roast potatoes are new Yukon Gold or any baby potatoes, not a waxy potato importantly, (choose small to medium ones – do not cut up) boiled skin-on and whole until quite tender. In a roasting tin toss them with olive oil, salt and pepper and add sprigs of thyme and rosemary. Add garlic cloves, skin on. Take a potato masher or some other flat thing and for each boiled potato, gently smash just slightly until a little bit crushed to expose more edges of both the skin and insides for crisping opportunity. Add a little more olive oil. Pop in the oven at a fairly high heat and turn when one side is golden. I love this method, and I think the tender skins add flavour and texture and nutrition plus you don''t waste them, plus saves having to peel. Crispy outsides with texture, fluffy middles, every time. Everyone loves these when I make them. Plus you get jammy sweet roasted garlic cloves to squeeze out of their skins – oh so good. Try to get garlic with nice big juicy cloves.

    I learned that roast potatoes in my world are vastly different, and seemingly boring than UK roast potatoes. Yummy!
