Beignet Recipe with Cafe au Lait Icing

A few days in New Orleans and it was clear that the city is mad for Beignets… you can get them 24 hrs a day and people stand in line for them for ages! So here’s our take on the little fried doughnut-like treats.

    These could almost be what kiwis call fry bread. Fried bread. More enriched and wet then we make but otherwise quite similar. Good fry bread here is also gone in the blink of an eye. Savoury with hangi or boil up. Or sweet with jam and cream. Or just with butter. Ours arent quite as fluffy usually though. But sometimes people dont add yeast.

    The beignets in New Orleans were fatter. These are so flat. Admittedly, I found Cafe Du Monde's beignets too dense for my liking.

    Made these at my school and they were a big hit. I doubled the recipe and thought I had made too much, but they were gone in no time.

    I tried this cool recipe with some variations: evaporated milk instead of buttermilk, added a tbsp of softened salted butter and made them thicker. Yummy! wish I could post my pictures here. Thanks for the recipe.

    I know it's a late reply but in most beignets recipes they use eggs. Why didn't you ??? I am glad though since I have a allergy to eggs and was looking for a beignet recipe .

    These remind me of sopapillas. it's a very similar dessert type thing from new mexico, but theres some restauraunts here in utah that sell them too. they're not hard to make on your own. basically, you take a sweet bread dough, divide it into little balls, and then stretch them out into discs, and then deep fry them, and then you dump a bunch of honey and butter on them and then you eat too many and make yourself feel ill.

    We make this too in Eritrea (Africa), my mom has been making these since as long as I remember, but we call them dolchee. they're delicious.
