When I have lots of milk to use up, I make pancakes/waffles/crepes because they freeze well for quick breakfasts. Or, I just freeze the milk. No need for an extra trip to the shops when we run out 😉

If you do peel large mushrooms, use the scraps to make vegetable stock; or I might even shred them and add to a slow roast meat dish. No waste 😉

Texas , from my raising if we have to use up milk quickly it's usually a potato chowder , or milk pie or pre batching gravy for the freezer portions

I always thought vanilla extract was to be added at the end so it does not evap due to the alcohol content. You guys frequently use vanilla during the cooking process. Have I been working under an incorrect assumption?

My family is from Bangladesh, so my mom made rice pudding with lots of other spices, like cardamom and cloves. So what I do is I infuse the milk with cinnamon stick, nutmeg, cloves, cardamom, star anise and bay leaves. Once it comes to a boil I let it steep for about 10 minutes. Then I strain it, put it back on the heat, add sugar, brown sugar and stir it until the sugar is dissolved. Then I add my rice, bring it up to a boil and simmer it until the rice is cooked. I then add raisins during the last 5 minutes of cooking so when the pudding is done, the raisins are nice and plump. Lastly, I season with just a pinch of salt to enhance all the flavors and spices. And that's my Indian Rice Pudding: Orv-ed!

As an Italian I must say: that is not polenta, it's a soup. As it's made with milk, it's a dessert even. Polenta is stodgy, not very flavorful, simple. Just polenta flour cooked in water with a big pinch of salt for some 40-60 minutes. The flavor comes from the sauce.

In Barry's dish once they infused the milk with whole rosemary why did they take it out and add more rosemary, why couldn't they just cut up the used rosemary? Why did they need a new one?
