They are also easier to handle because they are made in a cupcake tray as apposed to making this as a cake in a cake tin/casserole. The kids are going to love this concept.

Malva pudding is a rich & sweet dessert which originated in South Africa. It has a springy caramelized surface & contains apricot jam which is the main ingredient. A cream sauce is frequently poured over it while it is hot, & it is typically served hot with custard, whipped cream or ice cream. Numerous South African eateries offer it.

The origin of the name “Malva” with respect to Malva Pudding has some disputes as to it’s origin. Some people believe that the name derives from the fact that Malva pudding used to be served, in the Cape, with a dessert wine called Malvacea from Madeira. Many others assume that because of the texture being soft & light, as is a marshmallow – the Afrikaans word for marshmallow is “malva” which makes an obvious connection in respect of the pudding.
Some also believe the pudding was named after a woman called Malva.

Malva Pudding Cuppies Ingredients:
◆1 cup all purpose or cake flour
◆Pinch of salt
◆¼ cup milk
◆½ cup brown sugar
◆3 eggs
◆1 teaspoon white spirit vinegar
◆1 teaspoon bicarbonate of soda
◆4 tablespoons apricot jam
◆1 teaspoon baking powder
◆2 ½ tablespoons butter, melted

Sauce Ingredients:
◆1 tablespoon butter
◆⅓ cup brown sugar
◆40 ml water
◆80 ml fresh cream

Korean Style Juicy Lucy Burger with Kimchi Slaw
Serves 4

Ingredients:

For the Korean bbq sauce:
½ cup soy sauce
½ cup brown sugar
1 tablespoon gochujang
3 cloves garlic, grated
1 tablespoon grated ginger
1 tablespoon rice wine vinegar
1 teaspoon toasted sesame oil

For the patties:
1 ½ pounds ground beef, divided into 8 x 3 oz balls
8 oz mozzarella, torn
Salt and pepper
Canola oil

For the slaw:
½ cup kimchi (squeeze out juice and use as base for slaw)
2 tablespoons mayonnaise
2 tablespoon rice vinegar
1 tablespoon fish sauce
2 teaspoons gochujang
1 teaspoon toasted sesame oil
½ head napa cabbage, shredded
2 carrots, shredded
4 scallions, shredded
2 teaspoons toasted sesame seeds

To serve:
4 brioche burgher buns
2 tablespoons butter
Burger picks

Method:

For the Korean bbq sauce:
• Combine all of the ingredients in a saucepan and bring to the boil. Reduce the heat and simmer for 5-6 minutes until glossy. Set aside to cool.

For the patties:
• Press one of the balls of ground beef into the bottom of a burger press and make a small indentation in the middle. Put a quarter of the mozzarella in the centre, top with a second ball of ground beef and press down to seal. Repeat with the remaining beef and mozzarella. Chill for at least an hour.

• Heat a little oil in a non-stick skillet over a medium-high heat. Season the patties on both sides with salt, then cook for 3-4 minutes on each side. Towards the end of cooking, baste the patties in the bbq sauce until glazed and sticky. Briefly rest on a wire rack.

For the slaw:
• Squeeze the kimchi through a sieve, and catch the liquid in a large bowl. Whisk the mayonnaise, rice vinegar, fish sauce, gochujang, and toasted sesame oil. Shred the kimchi and add to the dressing along with the vegetables and sesame seeds, and toss to coat.

To assemble:
• Melt the butter in a non-stick skillet, add the buns cut side down, and toast until golden.

• Top the bun bases with a patty and the slaw, then top with a bun lid and secure with a burger pick.

*Recipe*
Paprika Garlic Shrimp
(With Warm Mediterranean Quinoa with Sautéed Vegetables)

Servings: 2
Ingredients:
1 lb jumbo shrimp, peeled and deveined
2 tablespoons kosher salt
Large pinch of ground black pepper
1 ½ teaspoon smoked paprika
3 tablespoons I Can’t Believe It’s Not Butter Extra Creamy stick, divided
1 large clove of garlic, grated or minced
1/4 teaspoon red pepper flakes (optional for heat)
2 tablespoons lemon juice and 2 teaspoons of zest
2 teaspoons chopped fresh parsley

Quinoa and Vegetables

Ingredients
1 cup cooked quinoa
1 cup water
4 tbsp I Can’t Believe It’s Not Butter Extra Creamy salted stick,
2 cloves garlic, grated or minced
1/2 small zucchini, diced
1/4 red bell pepper, diced
1/4 small eggplant, diced
1/4 red onion, diced
1/2 can (15 oz) chickpeas, drained and rinsed
3 sprigs of fresh oregano or 1 tsp dried oregano
1/4 cup Kalamata olives, sliced into quarters
4 tablespoons of fresh parsley, roughly chopped
Juice of 1 lemon

Instructions:
• Begin by making your seasoning salt, in a small bowl, mix your salt, paprika and black pepper and mix thoroughly

• For the shrimp, in a bowl or on a plate, season with a large pinch or 1 tablespoon of your seasoning salt and toss with the shrimp so it coats the shrimp evenly.

• In a large skillet, heat 3 tablespoons of I Can’t Believe It’s Not Butter Extra Creamy Stick over medium heat. Add shrimp in a single layer and cook for 1 minute.

• Flip the shrimp to cook the other side and add the garlic and red pepper flakes, sauté until fragrant, about 1 minute.

• Finish with the remaining 2 tablespoons I Can’t Believe It’s Not Butter Extra Creamy Stick, lemon and parsley and toss or stir until melted through and set aside off the burner.

• In a skillet, heat I Can’t Believe It’s Not Butter Extra Creamy stick, onion, zucchini, bell pepper, eggplant and garlic. Season with a pinch of the seasoning salt mixture. Saute until tender, about 7–8 minutes.

• Add in chickpeas and oregano and toss. Then add the quinoa and 1 tablespoon of the warm butter from the shrimp pan and toss until heated through.

• Spoon Quinoa on plate and top with Paprika shrimp. Finish with lemon juice and parsley.
